My favorite thing about late fall and early winter is Cranberry, There is something about that little very tart fruit that makes my heart jump with joy (or with cravings, but who cares?) I seriously can eat cranberries in any possible form that you can think of, even straight out of the bag without sugar (extreme I know) bu my favorite thing ever, the one that makes me feel ALL the feels is cranberry cake.
So this is the first year that I made a cranberry cake in my own very little kitchen and let me tell you something, I’m PROUD!!! Seriously guys this cake is so delicious ad so moist and so perfect and so wintery that everyone around you will rave about it, that if you decide to actually share it.
I would love to say that this recipe it’s like all the others around here (read extremely easy) but this one actually requires a little bit of care and a couple more of steps, but don’t worry nothing too complex or to get scared about, and actually all the steps are really fool proof. So pour yourself a glass of mulled wine, or juice or water or coffee or whatever is your jam and prepare to bake the cake that will rule your Holidays.
How to make cranberry cake
To make the cranberry cake you are going to need simple ingredients the most important? Cranberries, ’cause in this recipe we are using cranberries in 2 forms, one inside the cake (heaven bites) and sugared on top of the cake (read: heaven bites jr) besides that we are using the usual fare, flour, sugar and eggs (and a little couple of other things)
After you have all your ingredients mixed in pour the batter in a cake pan and bake for 40 minutes or until done. Remove from the oven and let it cool completely (seriously, let it cool down, I’m watching you)
Frost the whole cake with some vanilla frosting. I frosted with the help of a knife and then did the little twirls in the borders with a pipping bag. The decorate the center with some sugared cranberries.
I know there are a lot of steps but the result it’s SO WORTH IT
How to make cranberry sauce.
One of the most important aspects is to make a little cranberry sauce before placing the cranberries inside the batter. This is like THE secret. The difference between having a soggy disgusting cake and a master piece. So make the cranberry sauce.
To make the cranberry sauce just place the cranberries on a small sauce pan with a little bit of sugar, and a little bit of water. Simmer until the cranberries are soft. Once they are soft your sauce is ready to conquer your cake. The whole sauce making process takes around 3 minutes, 5 tops.
How to make sugared cranberries (or frosted cranberries)
Sugared cranberries or frosted cranberries are one of the cutest easiest decorations ever. You re going to need some fresh cranberries a little (very little) bit of water and some sugar. Spritz your cranberries with water and roll them on sugar and voila! You just created a little piece of sugared art.

- 1/2 cup cranberries
- 2 tablespoon sugar
- 1 tablespoon water
- For the sugared Cranberries:
- 1 Cup cranberries
- 1 tablespoon water
- 1/2 Cup sugar
- For the cake
- 1 1/2 Cup flour
- 1 Cup sugar
- 1 teaspoon baking powder
- 1/2 Cup milk
- 1 teaspoon vanilla
- 1/2 Cup butter
- Cranberry sauce
- For the cranberry sauce:
- In a small sauce pan over medium heat place the cranberries, water and sugar, Cook until the cranberries are soft, remove from the stove and let them cool.
- For the cake:
- Preheat the oven to 350 degrees. Grease and flour a small cake pan.
- In a bowl mix all the ingredients until everything is well incorporated.
- Pour the batter in the cake pan and bake for 40 minutes or until done.
- Remove from the oven and let it cool.
- Frost with some vanilla frosting, top with sugared cranberries,
- Serve and enjoy
