Guess what I made out at least 6 times in the past 2 weeks? Double shot espresso muffins!! Guys this is the ultimate breakfast food in the whole planet earth + it tastes like if a muffin had a love child with your favorite Starbucks drink.
You can find me from now on sitting in my breakfast nook eating all the muffins and drinking all the coffee cups and feeling all awake and happy and full of muffins. Coming from a person who makes desserts for a living I can honestly say that I don’t want to eat anything else ever, yep hot chocolate pancakes are pretty awesome, and oreo pancakes are just so good but these muffins? These muffins are the reason I don’t hate Mondays any more.
I’m a multitasker by nature, whether I like it or not so if I can simultaneously have my coffee and eat it too you can be pretty sure that I’m going to do that, and you can be pretty sure that since the moment you try these babies your morning routine is not going to be the same at all (hint: it’s going to be a million times better)
Also, you are going to have them for dinner, as snacks, maybe even for lunch! Breakfast/coffee is going to take over your life and there is nothing you can do to resist it.. wait that was maybe a little too much, but seriously these espresso muffins are just THAT good.
And please let’s talk for a second about how these espresso muffins make you feel, because oh my gosh they make you feel all the feelings.
First you feel all grown up and powerful making your own muffins from scratch, no quick mixes that the supermarket sells for 1$ and doesn’t taste that good at all, you are baking the with your own hands and in your own kitchen, and my friends let me tell you, there is no better feeling in the whole big world than making something delicious.
Then you get transported to a bakery, because the aromas, oh my gosh if I could get myself inside of the oven I would do it. The smell, while the espresso muffins are getting baked, is just so good that you will want to bake them every day so you can have that smell coming from your kitchen. Seriously they should bottle that thing up and sell it, I would probably buy them all.
After you take them out of the oven and give them the first bite you feel deeply happy. Seriously, there is no other better word to describe the huge happiness once you taste how delicious and awesome your treat is.
Then you feel awake and ready to tackle the world and conquer your to list, and master your day because they are called double shot for a reason, these espresso muffins are packed with a caffeine kick that is just what any weekday (and some weekends) needs.
And finally after you ate the last bit (of probably half batch) you are going to make a mental note to make them again, and again and well maybe again.
If those are not happy feelings I don’t know what happy feelings are then.
Oh and let’s not forget the fact that our espresso muffins can be frozen. Look it’s just not realistic to bake from scratch muffins every single day. But know what is totally attainable? Eating espresso muffins made from scratch every single day. Just freeze them for up to 6 months and you are done I have a full article how to freeze cupcakes and muffins in case you are interested. Trust me, bake a big batch on the weekend, make enough for a couple of weeks and you just set yourself for a successful week (or weeks) of delicious, fulfilling, awakening breakfasts.
- 5 Tablespoons butter
- 1/2 Cup white sugar
- 1/2 Cup brown sugar
- 1 Egg
- 1/4 Cup Strong brewed coffee
- 1 teaspoon vanilla
- 1 teaspoon instant espresso powder
- 1 teaspoon baking powder
- 1 1/4 Cup flour
- For the Streusel
- 2 tablespoon butter
- 2 tablespoon sugar
- 1/2 Cup flour
- 1 teaspoon cinnamon
- Preheat the oven to 350 degrees. grease and flour a muffin or cupcake pan.
- In a bowl mix the butter with the sugars until fluffy.Add the egg.
- Slowly pour the brewed coffee and mix. Do the same with the vanilla, espresso powder and baking powder.
- Add the flour in 2 additions and continue mixing until everything is well incorporated and there are no lumps left.
- Pour the batter in the muffin or cupcake pan and set aside.
- Prepare the streusel mixing all the ingredients until it resembles coarse sand.
- Top the muffins with the streusel mixture and take the pan to the oven
- Bake for 15/20 minutes or until done.
- Serve and enjoy
