I LOVE simple treats, but I love even more when they look like a million bucks and straight out of a posh restaurant. These layered lemon blueberry cups are just that. They look super fancy, elegant and prepared, but they actually take only 10 minutes to make. Oh, and they are also so delicious, everyone is going to ask for the recipe.
This is one of those recipes that’s made to share with friends or with your parents or even with your boss—if you are one of those people who actually likes their boss enough to invite them over for dinner. I made it for a dinner with close friends, and saying that it was a hit is an understatement.
It also takes 10 minutes to make, so it’s the perfect little treat to make when you’re in a time crunch (aka every time I invite people over). Just mix this, add that, top it off and then enjoy your get-together. Enjoy as well all the praise and the smiling faces and the “please share your recipe” compliments.
And can we talk about how creamy and bright and flavorful these layered lemon blueberry cups are? They are full of creamy Philadelphia Cream Cheese, some citrusy lemon juice and enough blueberries to make you feel like you’re in a blueberry field.
Then the toppings. The toppings that look like they were so difficult but that you can actually make in no time. I used some wafer sticks that ice cream shops use to decorate their ice creams, some beautiful blueberries and a little piece of lemon. The combo adds a lot of visual interest and makes it look almost architectural.
And the flavor and crunch factor of the toppings? Just magical, beautiful and delicious.
Now again to the layered lemon blueberry cups: make them now, invite some friends over, enjoy how great a cook you are and proceed to plan another excuse to make them again.
Just remember to always have Philadelphia Cream Cheese on hand. It’s the key to always getting super delicious results, because it’s made with fresh milk and real cream, with no preservatives. Nothing else tastes like it. Trust me: It’s foolproof, no matter what you are doing.
