First of all Welcome to Carmela POP, your new destination to beauty boosting oh so chic and easy recipes. Today I’m going to be sharing with you supermodels a delicious healthy chocolate chunk muffins recipe that will perfectly complement your beauty routine.
When I shared a picture of these healthy chocolate chunk muffins on our instagram a couple of months ago I got hundreds of messages asking for the recipe so I thought that it was the best insider secret to open up the blog.
They are super versatile and great if you know a hectic week is coming up because you can store them in the freezer and just pop them in the microwave for a couple of seconds before eating them. Also these healthy chocolate chunk muffins are super moist and taste almost like frostless cupcakes wich makes them feel more like a treat, also they look great en pictures! (not that you are going to instagram them or anything 😉 )
I included a quick gluten free baking mix recipe + the recipe for making them at home and also a couple of substitutions if you prefer to make them paleo
But first, how to really amp up the antioxidants of thhese healthy chocolate chunk muffins?
It all comes down to the quality and the type of the chocolate you are using to make them. The darker the chocolate the better. I usually prefer to buy one with at least 70% cacao and no sugars added. Ideally you would be baking with one between 70% and 90%.
If you are not a big fan of bitterness in chocolates you can check the description the makers give in the label and search for words such as fruity or with berry tones or even with raisin undertones, in my experience they tend to be the sweeter ones.
If you are following a paleo diet feel free to change the chocolate chunks for cacao nibs, the result is delicious as well
Trust me when I say that dark chocolate is going to become your go to treat (just like a pair or perfect skinny jeans) because it has really beauty boosting benefits! It’s great for your skin, hair and nails because it’s full of manganese, copper and iron. And it’s a powerful source of antioxidants protecting you against oxidation which means longer life and envy worthy skin, can it get better?
So, how to make these beauty bombs (also known as healthy chocolate chunk muffins) that will keep you full longer and make you look outstanding?

healthy chocolate chunk muffins
For 7 large chocolate chunk muffins (a week of snacks)
Ingredients:
1/2 Cup coconut oil or butter
1 Cup organic estevia (the cup for cup one)
2 Eggs
1 1/2 Cup gluten free flour mix (feel free to use almond flour)
1/2 Cup almond milk
1 Teaspoon vanilla
3/4 Cup dark chocolate chunks
1 Teaspoon baking powder
Preparation
Preheat oven to 350 degrees
Line a muffin tray with 7 baking cups
In a bowl cream coconut oil and estevia
Add eggs one at a time mixing well until combined. Add the vanilla
Add the flour and the baking powder in 2 additions alternating with the almond milk. Mix until completely incorporated.
With a spoon mix in the chocolate chunks
Scoop a medium amount of batter into each muffin liner
Bake for 20/25 minutes until the muffins are done. Remove from the oven and let them cool completely
Store on an air tight container for 3 days or froze them in a Ziploc bag for up to 2 months
Quick Gluten free flour mix
1 Cup rice flour
1/2 Cup brown rice flour
3 Tablespoon ground flaxseed (optional)
3 Tablespoon almond flour (optional)
1/2 teaspoon xanthan gum

Cuando compartí la foto de estos healthy chocolate chunk muffins en nuestro instagram hace unos meses recibí cientos de mensajes pidiendo la receta así que me pareció que seria el mejor insider secret para inaugurar nuestro blog
Son super versátiles y buenísimos si sabes que vas a tener una semana atareada porque los puedes guardar en el congelador y solo meterlos por unos segunditos en el microondas antes de comerlos.
Ademas son super moist y casi casi como un cupcake sin frosting lo que los hace sentir mas como un treat. Y aquí entre nos se ven super bien en fotos (no es que le vayas a estar tomando fotos ni nada 😉 )
Incluí una receta de mix de harina gluten free rapidito + la receta para hacer estos healthy chocolate chunk muffins en casa y un par de sustituciones por si prefieres hacerlos Paleo
Pero primero, como realmente supercargar de antioxidantes a estos healthy chocolate chunk muffins?
Todo se reduce a la calidad del tipo de chocolate que estés usando para hacerlos. Mientras mas oscuro el chocolate mejor. Usualmente yo prefiero comprar uno con por lo menos el 70% de cacao y sin azucares añadidas. Idealmente estarías horneando con uno que tuviese entre el 70% y el 90%.
Si no eres muy fanático del chocolate amargo (una critica super común de los chocolates oscuros) lo mejor que puedes hacer es chequear la descripción que el fabricante le da en el empaque y busca palabras como frutal o con tonos de frutos rojos o pasas, en mi experiencia tienden a ser los mas dulces. Si estas siguiendo una dieta Paleo puedes cambiar los chunks por nibs de cacao y el resultado va a ser buenísimo también
Créeme cuando te digo que el chocolate oscuro que se va a transformar en tu treat favorito (tal cual como ese par de skinny jeans que no te quitas nunca) porque realmente esta lleno de beneficios para hacerte brillar desde adentro! Es genial para la piel, el cabello y las uñas porque esta lleno de manganeso y hierro y ademas es una potente fuente de antioxidantes que te protegen contra la oxidación lo que significa una vida mas larga y una piel de envidia, podría ponerse mejor?
Entonces como hacer estas bombas de belleza (aka healthy chocolate chunk muffins) que te van a mantener llena por mas tiempo y dejarte radiante? Sigue la receta que esta aquí abajo!
Healthy Chocolate Chunk Muffins
Para 7 healthy chocolate chunk muffins grandes (una semana de snacks)
Ingredientes:
1/2 Taza de aceite de coco o mantequilla
1 Taza de estevia (la que es taza por taza)
2 Huevos
1 1/2 Taza de mix de harina sin gluten (puedes cambiarla por harina de almendra)
1/2 Taza de leche de almendra
1 Cucharadita de vainilla
3/4 de Taza de chunks de chocolate oscuro
1 Cucharadita de polvos de hornear
Preparacion:
Pre calienta el horno a 350 grados
Coloca en una bandeja de muffins 7 capacillos
En un bowl mezcla el aceite de coco la estevia
Agrega los huevos, 1 a la vez mezclando hasta que todo este bien combinado
Añade la harina y los polvos de hornear en 2 adiciones intercalándolo con la leche de almendras. Mezcla hasta que este completamente incorporado
Con una cuchara incorpora los chunks de chocolate
Vierte la mezcla en los 7 capacillos
Hornea por 20/25 minutos o hasta que los muffins estén listos. Sacalos del horno y deja que se enfríen por completo.
Guardar los healthy chocolate chunk muffins en un envase cerrado por 3 días o congelalos en una bolsa Ziploc por hasta 2 meses
Mix de harina sin gluten rapido
1 taza de harina de arroz
1/2 taza de harina de arroz integral
3 cucharadas de linaza (opcional)
1/2 cucharadita de goma xanthan
