Peanut Butter Cupcakes!!! I need you to understand that these cupcakes are perfect, first because they are cupcakes and that already makes them pretty great and then because they use peanut butter!!! PEANUT BUTTER!! Which obviously makes them the best thing in the world and beyond
and I don’t know if you know this yet but peanut butter is GREAT
please don’t tell the nutella that I said that
or the oreos
But peanut butter has some old school, first snacks kind of charm (because we all know how hard the memories of peanut butter sandwiches are engraved on our brains)
And although Peanut Butter Cake is delicious and a Single Serving Peanut Butter and Jelly Cupcake may be the best single serving dessert ever sometimes we just need the plain awesomeness of a peanut butter cupcakes
It’s just as awesome as watching this baby goats in pajamas
I lied, nothing is as awesome as those baby goats, because in what universe can anything be better than baby goats, much less if they are in pajamas, pajamas you guys!! I may have watch that video, and then the extended version, and then maybe (just maybe) tried to convince my friend to buy a baby goat pet (he obviously said no, and I couldn’t find anywhere online that sold baby goats or little pajamas).
But that’s not the point
the point here is that these peanut butter cupcakes are great
The base is vanilla, pretty basic, because Mondays are not made to handle complicated things, and these peanut butter cupcakes understand that is Monday
and they understand that the boss was difficult, the class a little harder and that we just want to sleep a bit more (actually more like till the next Friday, but that can still be considered a bit right?)
The frosting is our traditional vanilla buttercream, but with a couple of tablespoons of peanut butter.
Just a few so it doesn’t look brown and instead has a pink undertone (think blushing bride or some cool name like that)
Also, pink makes it look less like Monday and more like Friday
actually who am I kidding? Peanut Butter Cupcakes make the Monday less Monday and more Friday who cares if they are pink, brown, or yellow? (well I care a bit, but it’s because pink anything makes me happy)
What I’m trying to say is that peanut butter cupcakes are so good that I’m going to stop telling you how awesome they are, and how cute baby goats look on pajamas because you need to go now and make them.

- 1½ Cup flour
- ¾ Cup sugar
- 1 teaspoon baking powder
- ½ Cup butter
- 2 Eggs
- ½ Cup water
- 1 teaspoon vanilla
- 1 Cup Vanilla frosting
- 2 tablespoon peanut butter
- Preheat the oven to 350 degrees. Line a cupcake pan with cupcake liners.
- In a bowl mix the flour, sugar and baking powder. Slowly add the butter and continue mixing until it resembles coarse sand.
- With the mixer on medium speed add the eggs, water, and vanilla. Whip it for 3 minutes or until the mixture is shiny.
- Distribute the batter in the 12 cupcake liners.
- Bake for 15/20 minutes or until done.
- Remove from the oven and from the pan and let them cool until they are no longer hot to the touch
- Remove from the oven and let them cool.
- Mix the vanilla frosting with the peanut butter
- With the help of a piping bag decorate each cupcake
- Serve and enjoy

Peanut Butter Cupcakes!!! Yo necesito que ustedes entiendan mi felicidad absurda por estos ponquecitos, porque es que son demasiado perfectos, primero porque son ponquecitos y aja ya eso le da como super puntos por adelantado y segundo porque son de penaut butter / mantequilla de maní /mantequilla de cacahuate (dios mio que cantidad de maneras para referirse a eso) y eso los termina de hacer geniales
yo no se si ustedes lo saben pero el peanut butter es genial
que no se entere la nutella
ni las oreos
pero es que el peanut butter tiene un encanto en si mismo.
Es igual de genial que estas cabritas en pijama,
mentí es menos genial que esas cabritas en pijama porque nada le gana a cabritas mucho meno si están en pijama, en pijama señores!!! puede ser que haya visto ese video y luego la versión extendida y que luego le haya pedido a mi amigo comprar una cabrita para tener de mascota (obviamente me dijo que no y tampoco supe como buscar en internet cabras a la venta o pijamas de cabra)
pero en fin el punto es que estos peanut butter cupcakes son geniales
El ponquecito es de vainilla, bastante básico porque los lunes no son para estarse complicando la vida, y los peanut butter cupcakes entienden que es lunes
y entienden que el jefe fue un fastidio, el profesor un poco tonto y que nosotros solo queremos dormir un poquito mas(esta bien mas como 3 días de sueño, pero 3 días puede ser considerado un poqutito)
el frosting es el tradicional de vainilla también, pero con unas cucharadas de peanut butter.
Unas poquitas para que no se vean marrones, sino mas como rosaditos
y el rosadito hace que ademas el lunes se vea menos lunes y mas viernes
a quien engaño, ya los peanut butter cupcakes hacen que el lunes se vea menos lunes y mas viernes a quien carrizo le importa si son rosados o marrones o amarillos? (bueno a mi un poquito porque yo asi pero en fin)
El punto es que estos peanut butter cupcakes son tan buenos que yo voy a parar de contarles los maravillosos que son, y lo lindas que se ven las cabras bebe en pijama porque ustedes tienen que ir ya a hacerlos
Peanut Butter Cupcakes
Para 12 Peanut Butter Cupcakes
1 1/2 Taza de harina
3/4 Taza azúcar
1 Cdta polvos de hornear
1/2 Taza mantequilla
2 Huevos
1/2 Taza agua
1 Cdta vainilla
1 taza Frosting de Vainilla
2 Cdas peanut butter
Precalienta el horno a 350 grados. Coloca capacillos/capsulas en una bandeja de cupcakes.
En un bowl mezcla la harina, azúcar y los polvos de hornear. Poco añade la mantequilla, mezclando hasta que parezca arena gruesa.
Con la batidora a velocidad media agrega los huevos, el agua y la vainilla batiendo bien por 3 minutos o hasta que la mezcla este brillante y sedosa.
Distribuye el contenido en los 12 capacillos/capsulas
Lleva al horno por 15/20 minutos o hasta que estén listos.
Saca del horno y de la bandeja y déjalos enfriar hasta que no esten calientes al tacto
Mezcla el frosting con el peanut butter
Decora y disfruta
