Summer is coming to an end, and that makes me extremely happy and extremely sad at the same time; extremely happy because finally the crazy heat is going for good! which means I can turn my oven on without feeling like I’m putting my whole house inside the oven, and extremely sad because well the hot days are coming to an end and with them also all the fun filled summer days that are the highlight of the year.
So I feel that we need to celebrate this awesome season, and in here if we are going to celebrate something we are really going to make a party (a cupcake party that only takes 30 minutes to get done!) and what better way to celebrate the concerts, the lazy days lounging by the pool, the beach bonfires, the lake cabins and the summer flings than with the most summery treat ever, the S’more!
Obviously this is going to be a S’more shaped like a cupcake
a S’more cake or a cups’more or Smore Cupcakes (boring but definitely easier to say haha)
As I already told you, these Smore Cupcakes take about half an hour from start to finish (if you don’t count the cooling time) and the end result is EXTREMELY GOOD and highly addictive (I warned you)
The cupcake base is vanilla, the frosting is vanilla too and the topping is mini chocolate chips and a huge roasted marshmallow. Like HUGE, because we all know that roasted marshmallows is what makes this Smore Cupcakes really stand out
and it has the best heart ever (aww)
a chocolate heart that is, I mean it’s filled with ooey gooey NUTELLA!!!
It’s so good that I really couldn’t snap a picture, I ate it before that. You can’t just bite it and thet put it down, you have to eat the whole thing and then other, and then other, and then you can think about sharing a couple, and then just eat them too, in you couch, watching netflix #sorrynotsorry
So what are you waiting to make this Smore Cupcakes?
The frosting Recipe is here
- 1 1/2 Cup flour
- 3/4 Cup sugar
- 1 teaspoon baking powder
- 1/2 Cup butter
- 2 Eggs
- 1/2 Cup water
- 1 teaspoon vainilla
- 12 tablespoon Nutella (1 for each cupcake)
- 12 Marshmallows (1 for each cupcake)
- Chocolate chips
- Vanilla frosting
- Preheat the oven to 350 degrees. Line a cupcake pan with cupcake liners.
- In a bowl mix the flour, sugar and baking powder. Slowly add the butter and continue mixing until it resembles coarse sand.
- With the mixer on medium speed add the eggs, water and vanilla. Whip it for 3 minutes or until the mixture is shiny.
- Distribute the batter in the 12 cupcake liners. Put 1 tablespoon of nutella in the middle of each cupcake and place th pan in the oven.
- Bake for 15/20 minutes or until done.
- Remove from the oven and from the pan and let them cool until they are no longer hot to the touch
- Meawhile place some aluminium foil in a pan and distribute the 12 marshmallows. Take them to the oven on broil setting for 2 minutes or until roasted.
- Remove from the oven and let them cool.
- Whip the frosting.
- With the help of a pipping bag decorate each cupcake
- Place one marshmallow on top and sprinkle with chocolate chips.
- Serve and enjoy
Se esta acabando el verano, y eso me pone demasiado feliz y demasiado triste al mismo tiempo.
Demasiado feliz porque finalmente se esta acabando el calor!! Lo que significa que podre prender mi horno sin sentir que estoy metiendo toda la casa dentro del horno, y demasiado triste porque se esta acabando el calor y con el todas las actividades veraniegas que llenaban mi calendario.
Lo se, un poco contradictorio pero es que realmente solo quiero una temperatura media todo el año, es tan difícil eso? (respuesta: aparentemente si)
Sin embargo, siento que no nos podemos despedir de esta temporada sin celebrarla, porque aquí si nos despedimos de algo nos despedimos por todo lo alto (aunque el todo lo alto solo tome una media hora para estar listo!!) y que mejor manera de celebrar todos esos conciertos al aire libre, días larguísimos de piscina, fogatas en la playa, cabañas de lago y amores de verano que con el postre mas representativo de todos: el S’more!
Obvio este va a ser un S’more en forma de cupcake.
Un S’morecake, o Cups’more, en fin, Smore Cupcakes que es mas fácil haha.
La verdad es que, cómo les comente arriba, toma una media hora para estar listo (sin contar el tiempo que tenemos que dejar que se enfríe) y el resultado es DEMASIADO BUENO.
La base del ponquecito o cupcake es de vainilla, el frosting es también de vainilla, y el topping tiene mini chispitas de chocolate y un marshmallow rostizado, porque todos sabemos que un marshmallow rostizados enorme es lo que hace a estos Smore Cupcakes mágicos.
Y lo mejor de todo es su interior (aww)
Estos Smore Cupcakes están rellenos de nutella (o crema de avellanas, o chocolate derretido o untable de cacao o lo que tengas a mano)
Eso es de otro planeta de hecho es tan rico que no le pude tomar una foto, me lo comí antes, lo se no es lo correcto pero me lo tenia que comer, uno no le puede dar un mordisquito y planear dejarlo ahí después de probarlo, van a querer comerse otro, y otro, y luego otro y luego podrán pensar en compartir los que quedan.
Smore Cupcakes
Para 12 Smore Cupcakes
1 1/2 Taza de harina
3/4 Taza azucar
1 Cdta polvos de hornear
1/2 Taza mantequilla
2 Huevos
1/2 Taza agua
1 teaspoon vainilla
12 Cdas de nutella (1 por cada cupcake)
12 Marshmallows/malvaviscos grandes (1 por cada cupcake)
Chispitas de chocolate
Preparación
Precalienta el horno a 350 °F
Coloca capacillos/capsulas en una bandeja de cupcakes
En un bowl mezcla la harina, azúcar y los polvos de hornear
Poco a poco añade la mantequilla, mezclando hasta que parezca arena gruesa
Con la batidora, a velocidad media, agrega los huevos, el agua y la vainilla batiendo bien por 3 minutos o hasta que la mezcla este brillante y sedosa
Distribuye el contenido en los 12 capacillos/capsulas y coloca 1 cucharada de nutella en el centro de cada uno
Lleva al horno por 15/20 minutos o hasta que estén listos
Saca del horno y de la bandeja y déjalos enfriar hasta que no estén calientes al tacto
Mientras tanto, coloca papel aluminio en una bandeja de horno
Coloca los 12 marsmallows/malvaviscos separados unos de otros
Llevalos al horno por 2 minutos (si quieres que se pongan dorados coloca el horno en “broil” para que el calor salga por arriba)
Retira del horno y dejalos enfriar
Bate el frosting
Con la ayuda de una manga pastelera coloca el frosting en cada cupcake
Separa con cuidado los marshmallows/malvaviscos del papel de aluminio y “pega” 1 por cupcake
Decora con chispitas de chocolate y sirve
