Most of the times, when I share a cake or cupcake recipe I tell you that you that you can add whatever frosting you have on hand, and truth is, most of my recipes go pretty well by themselves or with any frosting recipe you like (I have even told you that sometimes I use boxed frosting!)
But I’ve been wanting to sit down and write a complete post for the Ultimate Vanilla Frosting!
I wanted to share with you a kick butt recipe and lots of tips to create a bakery quality treat at home without the fuzz. So finally I decided to do it and I’m pretty proud of the result!
Yeah, this is the Ultimate Vanilla Frosting, trust me, you are not going to need any other vanilla frosting recipe in your life, because the result is soooo delicious! it´s fluffy, sweet but not overpowering and so creamy without weighting down your cake or cupcake.
It´s a basic buttercream that doesn’t taste like butter and you are going to want to eat it directly from the bowl with the biggest spoon you can find (at least that’s what I did) and I don’t know if its just me but it tastes VERY similar to the cream in the Oreos and that makes it even better!!
So before the recipe, I want to share a couple of tips that help me a lot with the buttercream

Use butter, real butter
I don’t really know why this happens but every time that I made frosting with anything but butter (think shortening or margarine or butter substitutes) the result is well less than perfect (really less than perfect) and obviously a Ultimate Vanilla Frosting can’t be less than perfect

Add the confectioners sugar s-low-ly
Most of the times I feel the urge to dump all the ingredients in the mixer and call it a day (what can I tell you? I have zero patience) but with buttercream is better if you add the sugar bit by bit, you give butter enough time to incorporate it and it becomes fluffier.
Also adding it slowly allows you to really make it to your taste! Really small things like the exact speed of your mixer, the humidity of your kitchen or how powdered is your sugar affect the end result and therefore the amount of confectioners sugar that you need to add to give it enough body.

Frosting should be creamy not hard!
So resist the temptation of adding more confectioners sugar.

Use confectioners sugar
At first, I though this was obvious, but the I remembered that time when I was starting to bake and didn’t knew the difference between table sugar and confectioners sugar so I though why buy another one? And made it with the granulated one. Needless to say the result was horrible and one of the worst things I’ve made until today.

It’s easier if you make it with a mixer
Actually I prefer to make things with as little tools as possible and I didn’t even bought a mixer till 6 months ago (most of the treats made in the bakery were made by hand!) but with frosting a mixer really helps!
You end up with a fluffier frosting with more air in it. With that being said if you don’t have a mixer don’t worry, just keep in mind that the result might be heavier.

Use a good quality vanilla extract
This is only my opinion and it’s actually based on pretty much nothing, but good quality vanilla makes an Ultimate Vanilla Frosting with less butter flavor and a more interesting flavor than just sugar.

So enough tips for today lets get to the real deal the ultimate vanilla frosting.
- 1/2 Cup butter
- 2 Cups confectioners sugar
- 2 teaspoon vanilla extract
- Place the cold butter in a bowl and whip it for 1 minute with the mixer on medium speed.
- Add the vanilla and continue mixing for another minute.
- Slowly add the confectioners sugar and continue mixing for 3 minutes or until light and fluffy, stopping to scrape the sides on the bowl.

La mayoría de las veces que publico una receta de torta o de cupcakes les digo que le pueden agregar el frosting/betun que prefieran, y la verdad es que la mayoría de las recetas que comparto quedan bien tanto solas como con cualquier receta de frosting que tengan a mano (incluso les he comentado que a veces uso el de potecito!)
Sin embargo, tenía tiempo queriendo sentarme a escribir de verdad un post donde pudiese explicarles bien como hacer un frosting digno de la mejor tienda de cupcakes, receta exacta y todo y con un montón de tips, así que porfin me decidí a hacerlo y la verdad estoy bastante orgullosa del resultado.
Si, este es The Ultimate Vanilla Frosting, de verdad les digo que después de tener esta receta no van a necesitar ninguna otra de vainilla mas nunca, es que el resultado es demasiado demasiado demasiado rico, es esponjoso, dulce pero no enmascara los demás sabores y es súper cremoso sin ser pesado.
Es un buttercream básico que no sabe a mantequilla y que te vas a querer comer a cucharadas del pote sin compartir (o al menos eso hice yo), no se si son ideas mías o que pero al menos a mi me sabe muy similar a la cremita de la oreo y eso lo hace mas perfecto aun..
Por cierto, como se comen las oreos ustedes? A mi me encantaba quitarle la galleta comérmela rápido porque no me gustaba tanto y luego hacer un pegoste enorme con todas las cremitas, dicho así suena asquerosisimo, para para la Anita de 8 años era lo mas rico que existía en el mundo.
Ahora, de grande, hago básicamente lo mismo pero sin que nadie me vea haha ..
Antes de entrar en la receta como tal, les quiero compartir varios tips que a mi me han servido en esto de hacer buenos buttercreams.
Tips para the ultimate vanilla frosting en casa

Usa mantequilla, no margarina
La verdad no se mucho cual es la lógica atrás de esto pero de todos los trillones de veces que he intentado hacer buttercream cada vez que lo hago con margarina el resultado es simplemente asqueroso, el sabor no es el mejor del mundo y la textura es bastante mediocre, además no esponja igual y resulta en un frosting más pesado, que definitivamente no es digno de ser The Ultimate Vanilla Frosting. Moraleja, la mantequilla es tu amiga (al menos cuando de hacer buttercreams se trata).

Agrega el azúcar pulverizada poooco a poooco
Por lo general yo siento la necesidad de tirar todos los ingredientes a la batidora lo mas rápido posible para terminar la receta rapidísimo (qué les puedo decir? soy una atorada) pero con el buttercream es mejor si vas agregando el azúcar pulverizada poco a poco, le vas dando tiempo a la mantequilla de integrarla bien y permites que se esponje mas. Ademas agregándole el azúcar poco a poco te vas dando cuenta cual es el punto exacto para ti! cosas que son pequeñísimas como la velocidad exacta de tu batidora, la humedad de tu casa el tiempo exacto de batido o que tan fina está molida tu azúcar pulverizada pueden afectar la cantidad de azúcar que necesitas para darle buen cuerpo.

El frosting tiene que quedar cremoso, no duro
Así, que no te sientas tentado a agregarle azúcar pulverizada de más, lo sé, la tentación es fuerte, si una cucharada es buena dos son mejor verdad? Lamento decirte que no (aunque si se trata de cucharadas de este frosting ya listo, comer mas siempre es mejor!) entonces cuando tengas agregadas 3/4 partes del azúcar que pide la receta prueba que tal está.

Usa azúcar pulverizada
Al principio pensé que esto era bastante obvio y luego me recordé de la vez que estaba empezando a hornear y no sabía muy bien que era azúcar pulverizada y lo hice con azúcar normal, resultado: un asco total. El azúcar pulverizada se ve casi como harina, la venden en bolsas en el supermercado y es lo que necesitas para hacer frostings (lo puedes encontrar también como azúcar glas, azúcar de repostería o nevazucar).

Es más fácil con batidora
La verdad soy de usar MUY pocas herramientas en la cocina, de hecho empecé a usar batidora hace poco más de 6 meses (si, la mayoría de los postrecitos que vendí cuando tenía la tienda fueron batidos a mano) pero para frostings verdaderamente esponjosos una buena batidora a velocidad media hace mucha diferencia y ayuda a incorporarle más aire a la mezcla resultando en un frosting más ligero. Dicho eso, si no tienes batidora no te des mala vida, el frosting te va a salir un poquito mas pesado y ya.

Usa un buen extracto de vainilla
Para mi una gran parte de la razón por la que el buttercream sabe mucho a mantequilla es porque usaste muy poca vainilla o un extracto de mala calidad. Esto es sólo mi opinión y no está basado mucho en nada, pero me he dado cuenta que un buen extracto “mata” bastante el sabor mantequilloso y le agrega una gama mas interesante de sabores que solo el azúcar tiene.

The Ultimate Vanilla Frosting
Para 2 Tazas de the ultimate vanilla frosting
1/2 Taza de mantequilla
2 Tazas de azúcar pulverizada
2 Cdtas de extracto de vainilla
Coloca la mantequilla ligeramente fria en un bowl y con la batidora en velocidad media bátela por 1 minuto
Agrega la vainilla y bate por 1 minuto más
Agrega poco a poco el azúcar pulverizada, parando para incorporar lo que queda en el bowl
Continua batiendo por 3 minutos o hasta que todo este incorporado y esponjoso
