Guys, I want to inundate you with Fall recipes, because OH MY GOSH FALL!!! I know I know, I’m that girl, call me basic if you want, I don’t care I’m going to be here eating all the apple cider donut cupcakes. all of them!!
Because if there is a thing that I love about this season (besides everything) is the huge amount of delicious food that you can eat, like pumpkin spice lattes (in cupcake shape so you can have your PSL and eat it too ) and pumpkin bars, and caramel apple cakes and a truck of apple cider donuts. I hunt them, I literally can go to a place if I know there is going to be apple cider donuts.
So being the crazy cupcake lady that I am I had to make the donuts to look, well like a cupcake. So Apple cider donut cupcakes it is, and if you want my personal opinion they taste even better. Making them is seriously easy and you don’t need to have you pipping game on fleek, which is a plus if you are new to baking, or if the thought of decorating your cupcakes gives you nightmares – just light trying to put eyeliner on and making it look symmetrical in both eyes (seriously why that thing has to be so hard?? why I always end up looking like a sad panda?) – because in this case you are just pipping a bit and the covering the whole thing with fairy dust, or cinnamon sugar whatever that’ what normal (boooring) people like to call it.
How to make apple cider donut cupcakes
Ok so you want to make this little bites of fall perfection, and now are wondering how can I make them ASAP, pretty easy my friends pretty easy. Make a traditional cupcake, add a bit of apple cider deliciousness, some teaspoons of spices (because duh fall = spices) and to the oven, while they are baking whip up the ultimate vanilla frosting, take cupcakes out let them cool, frost a bit and cover them with cinnamon sugar and that is it. They take around 40 minutes to make from start to finish and counting the cooling time – you can probably reduce a bit the cooling time if you pop them in the freezer but I’m not sure about the end quality – and that is it, want to take this up a notch and create the most fallish experience? Serve them with a big glass of hot apple cider or with a cup of Pumpkin Spice Latte.

- 1½ Cup flour
- 1 Cup sugar
- ½ Cup butter
- ½ Cup apple cider
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 Egg
- 2 Yolks
- 1 teaspoon vanilla
- Vanilla frosting
- 1/2 Cup sugar
- 2 tablespoon cinnamon
- Preheat the oven to 350 degrees. Line a cupcake pan with 12 cupcake liners.
- Mix all the ingredients together for 4 minutes or until everything is well incorporated
- Divide the batter among the cupcake liners.
- Place the pan in the oven and bake for 15 minutes or until done.
- Remove from the oven and let them cool.
- Whip up the frosting.
- In a bowl mix the sugar and cinnamon.
- Decorate the cupcakes and sprinkle with the cinnamon sugar mixture
