So, today I’m bringing you a brunch staple, ’cause we all know that brunch is the best meal of the week, yep you read that right, today we are having Brunch Muffins with Tomato Dipping Sauce
The best thing you can make after a night partying
or if you are like me after a night spent watching too much Netflix and dancing in my living room to make Diego laugh
they are also perfect for a dinner appetizer if you are more a dinner person, or if you want to look all homemaker you can also make them for a party, that way you can be THAT person bringing home made from scratch muffins and dipping sauce
(spoiler alter: everyone is gong to eat them all because they are delicious!!!)

you get a muffin, you get a muffin and you get a muffin *says this in Oprah style*
So you can make ahead a big batch, store them in the freezer and then just pop one in the microwave or the toaster for a few minutes, and enjoy a quick, homemade breakfast every day.
and be sure to have the sauce on hand too, that is the sauce part in the Brunch Muffins with Tomato Dipping Sauce
because the Ragú sauce is what really makes these little nuggets of happiness shine, it’s made with natural farm grown ingredients and no artificial colors or flavors + it’s pretty cheap (woojooo for affordability!!)
Also it tastes like if it was home made, seriously no one is going to feel a difference, it actually tastes like if it was made by a granny in Italy, well it kind of was made like this, but anyhow bonus points because it means less time in the kitchen, which also means more time stuffing your face with muffins, and sauce, and a whole lot happiness
Brunch Muffins with Tomato Dipping Sauce
1 1/2 Cup flour
1/2 teaspoon salt
2 teaspoon baking powder
1/4 Cup vegetable oil
1 Egg
1/3 Cup water
1/3 Cup Parmesan Cheese
preheat the oven to 350 degrees. Line a cupcake pan with 6 cupcake liners
In a bowl mix the flour, salt, baking powder and cheese.
Make a well in the center and add the water, oil and egg. With the help of a spatula incorporate everything together
Divide the batter between the 6 cupcakes liners and take to the oven
Bake for 20 minutes or until done
Remove from the oven.
Serve with a bowl of Ragú Sauce
