If I could eat only one thing for the rest of my life that thing would probably be pancakes, caramel pancakes that’s it.
These are super fluffy, packed with caramel flavor, topped with whipped cream and drizzled with more caramel.
Oh, and they are made with 5 ingredients so they are easy enough to make on a weekday but indulgent enough to be perfect for the weekends.
For me pancakes need to be packed with flavor, and I’m not talking about the syrups and toppings and all the little deliciousness, I’m talking about the actual pancake, they need to be flavorful, like so flavorful you could eat them alone without anything else added to them (I, of course, add them more things because well more is always better when it comes to toppings).
These caramel pancakes are just like that. They taste like caramel
And I’m talking like really really taste like real caramel, not any “oh yeah I feel that maybe back there was some caramel” but the “OMG THIS IS SO GOOD AND TASTES JUST LIKE A HANDFULL OF CARAMELS!!!” Yes, in all caps and with a crazy bunch of exclamation points. You get the deal.
But, how did I manage to make this taste like caramels with so little ingredients? (remember that we used 5).
Well, Simply Pure Creamer from International Delight is the answer. Simply Pure Creamer is a staple in my home, especially on my morning routines, because I’m one of those persons that like to drink her coffee white (read: with a ton of creamer) and this bottle here is flaunting a clean label of only 5 easy to pronounce ingredients.
So well, I fell in love and now buy it every time and keep it close to me.
Simply Pure Creamer also comes in a lot of delicious flavors, like Vanilla and Hazelnut and of course Caramel, and while the flavors are knock your socks off good I have a soft spot for caramel anything.
So, when I was brainstorming recipe ideas to share with you all and found myself with a craving for pancakes I went ahead and tried my hand at using the Simply Pure Creamer as one of the ingredients. Best Decision EVER.
Not only does the Simply Pure Caramel Creamer packs the Caramel Pancakes with a punch of carameliciousness (yes, I just made up that word) but it also helps the pancakes fluff better and gives them a better texture than any other liquid or milk you could use.
So what else do I used? Eggs, flour, sugar and baking powder + Simply Pure creamer and that’s it. 5 ingredients in your pancakes, 5 ingredients in your creamer and a whole lot of deliciousness.
- 1 Cup Simply Pure Creamer in Caramel
- 2 Eggs
- 1 1/3 Cup Flour
- 1/2 Cup sugar
- 2 teaspoon baking powder
- In a bowl mix Simply Pure Creamer in Caramel and the eggs.
- Add the sugar and the baking powder.
- Slowly incorporate the flour and keep mixing until there are no lumps left (around 2 minutes)
- Grease a pan and pour 1/3 cup batter.
- Cook until bubbly and flip. Let it cook for 1 more minute or until golden brown and remove from the fire.
- Repeat the process with the rest of the batter.
- Serve and enjoy!
