What ingredients you need to make Cracker Barrel blueberry hotcakes
Now that we are all on the same page about how delicious these pancakes are is time to gather the ingredients and get cooking.
What I love about this recipe is that all the ingredients are really easy to find and. you probably already have them all on hand. A good pancake recipe + an easy ingredient list = perfect breakfast time.
All purpose flour
This is the base of the recipe. Make sure you are picking an all purpose one and not the self rising kind. You want to be able to control the baking powder you add to the batter.
This will give your pancakes the perfect amount of sweetness. Adding sugar to the batter also helps in giving your pancakes a golden brown color and slightly crispy and caramelized edges.
Baking powder and baking soda
Pancakes should rise. The combination of baking powder and baking soda gives them all the extra oomph they need to rise a lot and be as light and fluffy as they can possible be.
Buttermilk is the secret ingredient (well not so secret) for all Cracker Barrel pancakes. This ingredient is what makes pancakes as soft as possible while also giving them a nice tangy flavor that’s to die for.
If you don’t have buttermilk you can create your own at home. Homemade buttermilk is made with only 1 cup milk and 1 tablespoon lemon juice. Stir and let it sit for a couple of minutes.
Melted butter, when added to the pancake batter, gives pancakes that amazing melt in your moth texture. Seriously if possible, add it and don’t sub it for vegetable oil.
This will give your pancakes structure and also give them the perfect protein kick a breakfast food needs.
Blueberry pancakes need blueberries! This recipe calls for a fair amount of blueberries, Cracker Barrel blueberry pancakes are really stuffed with them.
The original recipe calls for wild blueberries. Wild blueberries are smaller and have a bit more flavor than cultivated blueberries.
However, I know that’s not easy to find wild blueberries so you can make them with the cultivated ones.
How to make the best blueberry pancakes
There are a couple secrets to make the best pancakes ever.
Don’t overmix he batter
One of the most important tips to create incredible pancakes is not over-mixing the batter to not activate the gluten.
That way the pancakes end soft and airy and not tough and dry.
Let the batter rest before cooking
One thing all restaurants do (and Cracker Barrel does!) is preparing the pancake batter ahead of time.
When the pancake batter rests the gluten relaxes, the baking powder has time to activate and the flour hydrates.
The end result is a fluffy and soft pancake that’s melt in your mouth good.
30 minutes of resting time is enough.
Cook the pancakes on medium low heat
Cooking the pancakes on medium low heat gives them plenty of time to cook on the inside while not burning on the outside.
That way the pancakes are perfectly golden brown and the inside is perfectly cooked trough and soft.
Don’t press your pancakes down while cooking
I know, we all want to press our pancakes down with the spatula while they are cooking but fight the urge!
Pressing them only removes the ir bubbles that are a must if you want to have perfectly fluffy and tall pancakes.
What to serve with Cracker Barrel Blueberry Pancakes
Butter is the ultimate pancake topping and it’s a classic at Cracker Barrel. Use a good quality butter, it makes all the difference.
While the world famous wild Maine blueberry syrup is not available for purchase and you can only get it at Cracker Barrel restaurants you can still use any other blueberry syrup or even make it at home.
Blueberry pancakes with good quality butter and fresh blueberries on top are a-ma-zing.
The tartness of the fresh blueberries goes perfectly well with the sweet and fluffy buttermilk pancakes.
Bananas and strawberries are also delicious fresh fruits you can use as toppings.
Can we just agree that there’s nothing like maple syrup drizzled over a fresh stack of pancakes?
Cracker barrel sells it’s pancake syrup bottled and you can even purchase it on Amazon! It’s made with cane sugar and natural maple syrup and it’s incredibly delicious.
