What I love about this recipe is that all the ingredients are really easy to find and. you probably already have them all on hand. A good pancake recipe + an easy ingredient list = perfect breakfast time.
All purpose flour
This is the base of the recipe. Make sure you are picking an all purpose one and not the self rising kind. You want to be able to control the baking powder you add to the batter.
Sugar

One thing all restaurants do (and Cracker Barrel does!) is preparing the pancake batter ahead of time.
When the pancake batter rests the gluten relaxes, the baking powder has time to activate and the flour hydrates.
The end result is a fluffy and soft pancake that’s melt in your mouth good.
30 minutes of resting time is enough.
Cook the pancakes on medium low heat
Cooking the pancakes on medium low heat gives them plenty of time to cook on the inside while not burning on the outside.

Ingredients
- 2 Cups all purpose flour
- 1/3 Cup granulated sugar
- 2 Teaspoons baking powder
- 2 Teaspoons baking soda
- 1 3/4 Cup buttermilk
- 1/3 Cup butter melted
- 2 Eggs
- 1 1/2 Cup blueberries
Instructions
- In a bowl whisk together the flour with the granulated sugar, baking powder and baking soda.
- Add the buttermilk, melted butter and eggs and with the help of a spatula stir until just combined. Add the blueberries and stir into the batter.
- Preheat a griddle over medium low heat. Spread with butter.
- Pour 1/3 Cup batter and cook for 3 minutes or until small bubbles form on top. Flip and cook for 1 more minute or until golden brown.
- Repeat the process with the rest fo the batter.
