Apple Pie Cupcakes

Serves: 12 Cupcakes
- 1⅛ Cup flour
- 1 Tsp baking soda
- 1 Tsp cinnamon
- ¼ Tsp nutmeg
- ½ Stick of butter
- 1 Cup sugar
- 1 Egg
- ½ Tsp vanilla
- 1½ Cup shredded apple (or processed)
- Maple frosting (optional)
- Preheat the oven to 350 degrees. Line a cupcake pan with 12 cupcake liners. Set aside.
- In a bowl whip the butter and sugar until light and fluffy.
- Incorporate the egg and the vanilla and continue mixing for 1 minute.
- Mix in the baking powder cinnamon and nutmeg. Reduce the speed and incorporate the apples (around 2 minutes)
- Slowly incorporate the flour and mix for 3 minutes or until everything is well incorporated.
- Scoop the batter into each cupcake liner and take to the oven.
- Bake for 18 minutes or until done.
- Remove from the oven, let it sit for 5 minutes and remove from the cupcake pan.
- Let them cool until they are no longer hot to the touch and frost with the maple frosting.
