Apple Pie Cupcakes
Serves: 12 Cupcakes
  • 1⅛ Cup flour
  • 1 Tsp baking soda
  • 1 Tsp cinnamon
  • ¼ Tsp nutmeg
  • ½ Stick of butter
  • 1 Cup sugar
  • 1 Egg
  • ½ Tsp vanilla
  • 1½ Cup shredded apple (or processed)
  • Maple frosting (optional)
  1. Preheat the oven to 350 degrees. Line a cupcake pan with 12 cupcake liners. Set aside.
  2. In a bowl whip the butter and sugar until light and fluffy.
  3. Incorporate the egg and the vanilla and continue mixing for 1 minute.
  4. Mix in the baking powder cinnamon and nutmeg. Reduce the speed and incorporate the apples (around 2 minutes)
  5. Slowly incorporate the flour and mix for 3 minutes or until everything is well incorporated.
  6. Scoop the batter into each cupcake liner and take to the oven.
  7. Bake for 18 minutes or until done.
  8. Remove from the oven, let it sit for 5 minutes and remove from the cupcake pan.
  9. Let them cool until they are no longer hot to the touch and frost with the maple frosting.
