Pumpkin Cream Cheese Cupcakes with International Delight
  • For the Cupcakes
  • ¼ Cup International Delight® Pumpkin Pie Spice Coffee Creamer
  • 1¾ Cup flour
  • 1 Tsp baking powder
  • ½ Cup pumpkin puree
  • 2 Eggs
  • 1½ Cup sugar
  • ½ Cup butter
  • 1 Tsp vanilla extract
  • 1 Tsp pumpkin spice
  • For the Cream Cheese swirl
  • 1 Cup cream cheese
  • 1 Yolk
  • ¼ Cup sugar
  • 1 Tbsp International Delight® Pumpkin Pie Spice Coffee Creamer
  • For the Frosting
  • 1 Cup butter
  • 2 Cups confectioners sugar
  • 1 Tsp pumpkin spice
  1. Preheat the oven to 350 degrees. Line a cupcake pan with 12 cupcake liners. Set aside
  2. In a bowl mix the butter and sugar. Add the eggs, pumpkin spice, baking powder, and vanilla and mix until incorporated. Mix in the flour.
  3. Add the pumpkin puree and the International Delight® Pumpkin Pie Spice Coffee Creamer and mix until there are no lumps left. Set aside.
  4. In another bowl mix all the cream cheese swirl ingredients.
  5. Pour the pumpkin batter into the cupcake liners, Add 1 tbsp of cream cheese mix on top and with the help of a toothpick swirl it.
  6. Take to the oven and bake for 25 minutes or until done.
  7. Take out of the oven and let them cool until they are no longer hot to the touch.
  8. Meanwhile, whip up the frosting. Mix the ingredients on high speed for 3 minutes or until light and fluffy.
  9. Pipe on top fo the cupcakes and serve.
