I love smores they are always seasonal.
Summer? Sure, start a bonfire and roast those little clouds of heaven.
Fall? Gather around a bonfire, get toasty AND roast marshmallows.
Winter? Well just roast them in the fireplace.
See? Not matter what the occasion and not matter how cold or hot it’s outside marshmallows are always delicious.
The traditional ones are awesome but since we are in the middle of the winter I decided to give them a cold weather spin, so today it’s all about gingerbread smores.
Gingerbread smores are awesome not matter what the occasion but they are plain perfect for winter.
They are hot, and spicy and chocolaty and with the perfect amount of roastedness (is roastedness a word? I don’t know but it’s the best to describe them)
They taste better enjoyed immediately, when the marshmallow is still soft and your fingers get sticky, so they are the perfect treat to make for small groups, or for yourself.
Seriously there is nothing better in the whole world than to make single serving smores. It’s like “Sorry I can’t go to your (insert boring appointment) I have smores to roast for myself”
You can roast your gingerbread smores around the fireplace if you are one of those cool people that own one.
But if you are like me, and the only thing that has any kind of resemblance to a fireplace is your toaster oven, then you can use that as well!
They are also super duper easy to make.
And you only need 3 ingredients, but I’m pretty sure you already knew that, ’cause I mean they are Smores, and smores always use 3 ingredients right? So what makes them super cool? Gingerbread cookies!!
How to make Gingerbread Smores
Gather your ingredients
1. 2 Gingerbread cookies
2. 1 Chocolate piece
3. 1 Huge marshmallow
I used my gingerbread cookies and they are pretty awesomely cool, if I said so myself.
However, if you don’t feel like baking a batch (you totally should, they are the best!!) then you can use your favorite store-bought gingerbread cookies.
Place a huge marshmallow on top of the cookie.
I mean, you could use any size of marshmallow, but the huge ones make everything better (or maybe that’s just me).
Place them in the oven on broil until the marshmallow is golden. Drooling while they are baking is completely optional.
Take them out, top with a piece of chocolate and with another cookie and stuff your face with it, or you now eat it like a normal person would do.

- 2 Gingerbread cookies
- 1 Big marshmallow
- 1 Dark chocolate piece
- Set your oven on broil.
- Place the marshmallow on top of one on the cookies and take to the oven until the marshmallow is toasted
- Top with the chocolate and with the other cookie
- Enjoy
