Around here we believe in desserts for everyone you know? (and when I say we I mean I because around here it’s just me) and this gluten free vegan apple cake is just that! It’ a gluten free, vegan and kind of refined sugar free apple cake perfect for fall! But best, it doesn’t taste at all like gluten free or vegan or healthyish, it just tastes awesome, like seriously delicious and it’s really easy to make too, heart emojis for everyone.
And if you are not vegan/following a gluten free lifestyle/eating more healthy overall don’t worry you are not going to realize this with this gluten free vegan apple cake, so *win* healthy treats without the healthy taste (but if you really prefer the scrumptious full of caramel variation then check this double caramel apple cake)
Oh and it’s drizzled with the best maple glazed that exists to date
yes the smooth, melt in your mouth type of maple glaze that makes you dream with unicorns and smiles
I want you to look and this cake for a second, it’s seriously saying Bake me, bake me right now, you know you want me
and hey who are we to say no to the gluten free vegan apple cake right?
It’s almost a cake love song.
I created this recipe to be an all inclusive type of cake, the type of cake that you can take to a party or to Thanksgiving – what am I the only one that is thinking about Thanksgiving already? – and be sure that everyone will be able to enjoy it, and that is awesome. that alone make the cake a million times better, it gives it brownie points (yes, brownie points is a legit measurement unit)
So what do you need to know about baking to make this gluten free vegan apple cake?
Nothing.
Yup, this is a fist time bakers recipe at it’s finest. Just follow the step by step and you are done, set, ready, LISTO!
And the great thing is that the steps are like super easy, like throw everything in the bowl and just bake it easy.
It’s going to take a bit to bake thou, but you can watch a Netflix show while its baking so no problem there. Because Netflix + the smell of this deliciousness baking + a blanket, you win at life, seriously in that moment you know that you are rocking it.
I made it with a gluten free baking mix, the cup for cup variety, usually I prefer to make my own gluten free mix but sometimes I’m lazy and I buy the prepacked version.
Also, I used raw cane sugar, which gives it a nice caramel flavor. I personally LOVED it! It even gives the cake some caramel little pockets that tasted like heaven!
For the glaze I used maple syrup and confectioners sugar, so if you are trying to keep things more natural or more on the raw sugars side feel free to skip it BUT I highly recommend using it because its ~ delicious ~
