Most of the times I leave the most simple recipes for Wednesdays because, lets all be honest, Wednesdays are the middle finger of the week (actually I just read that and laughed so much that had to share it with you).
We are all full of activities because the work week is on full swing, also we are organizing our weekend plans and our summer Fridays (the struggle is real!), and on top of that the only thing that we actually want to do is get home from work/college/school/whatever and curl up in a ball while pressing a fast forward button that get up straight to Friday.
There is nothing better than an easy peasy recipe, with very little steps and that gives us the energy (that we need!!) to get to Friday without the fast froward button (actually I don´t know yet why are we not funding it)
So, this are healthy chocolate cupcakes, but easier,
there is no frosting (so you save up a couple of steps and dirty dishes there) and packed with a couple of healthy ingredients (so you can continue rocking your beach body plans).
And also, this Healthy Chocolate Cupcakes are super versatile, because yeah I love everything that can be used in more than 2 ways.
You can cut them in half, toast them a bit and eat them for breakfast with peanut butter. You can add a bit of frosting and some chocolate chips and have a beautiful thoughtful gift, or you could cut this Healthy Chocolate Cupcakes in half again and fill them with ice cream (and if that is not the perfect summer treat I really don´t know what can be then).
Bonus points if you cover you new ice cream cup sandwich with plastic wrap, place them on a cooler and take them as a beach snack.
Enough bla bla lets get cooking.
Healthy Chocolate Cupcakes
For 12 healthy chocolate cupcakes
1 1/8 Cup flour
1/4 Cup oat flour
1/8 Cup protein powder
1 Cup fructose (I bought mine at a health store but you can use coconut sugar or cane sugar)
1/2 Cup butter (or coconut oil)
1/2 Cup almond milk
1 Egg
2 Yolks
1/4 Cup cacao powder
1 Tsp baking powder
Preheat the oven to 350 °F.
Line a cupcake tray with 12 cupcake liners.
In a bowl whip the butter and sugar until light and fluffy.
Add the rest of the ingredients and mix on medium speed for 3 minutes or until everything is well incorporated.
Pour the mixture in the cupcake liners and place in the oven for 20 minutes or until done.
Remove form the oven and the pan and let them cool before storing.
Por lo general dejo las recetas mas sencillas para lo miércoles porque seamos honestos, es un día atravesado, y no solo eso si no que también esta lleno de diligencias y de cosas para hacer porque la semana productiva esta en todo su apogeo y porque estamos cuadrando y organizando nuestro fin de semana.
Además, lo que queremos hacer al llegar a casa después de trabajo/universidad/escuela/lo que sea es enrollarnos en una bolita y darle fast forward al viernes.
Por eso no hay nada mejor que una receta super facilita, con muy pocos pasos y que nos de la energía dulcera para seguir sin el botón de fast forward (que en verdad me pregunto porque no lo han inventado todavía)
Entonces estos son healthy chocolate cupcakes, pero mas fáciles, son sin el frosting (ya te quitas un paso) y le agregue un par de cositas mas saludables para que sean perfectos para cualquier hora (y para que te no dañen tus intereses de mantener tu cuerpo playero).
Además como siempre son super versátiles! Es que le tengo un amor a los postres versátiles que ustedes no se imaginan. Los puedes picar a la mitad, tostar un poquito y llenar de mantequilla de maní, los puedes cubrir con frosting y chispitas de chocolate y tienes un regalo super adorable. puedes picar estos Healthy Chocolate Cupcakes por la mitad otra vez y rellenar de helado(y si eso no es perfecto para el verano no se que puede serlo) mejor todavía si luego los envuelves en plástico de cocina, los metes en una cava y te los llevas de postrecito a la playa (!!!) En fin que son algo así como los mejores cupcakes semi saludables del planeta tierra.
Healthy Chocolate Cupcakes
Para 12 healthy chocolate cupcakes
1 1/8 Taza de harina
1/4 Taza de harina de avena
1/8 Taza de proteina en polvo
1 Taza de fructuosa (o el edulcorante para hornear que utilices, también puedes usar azúcar)
1/2 Taza de mantequilla (o de aceite de coco)
1/2 Taza de leche de almendra
1 Huevo
2 Yemas
1/4 Taza de cacao en polvo
1 Cdta de polvos de hornear
Pre calienta el horno a 350 °F o 180 °C.
Coloca 12 capacillos/capsulas a una bandeja de cupcakes.
En un bowl bate bien la mantequilla y la fructuosa hasta que este esponjoso.
Agrega el resto de los ingredientes y bate a velocidad media por 3 minutos o hasta que todo este bien incorporado.
Vierte la mezcla en los capacillos/capsulas y lleva la bandeja al horno por unos 20 minutos o hasta que introduzcas un palillo y este salga seco.
Retira del horno y de la bandeja y deja enfriar
