Have you ever found yourself with HUGE cravings of carrot cake? Yeah me too! I mean it’s just so soft, buttery, carroty and so delicious I could probably eat it all day. The only thing that used to stop me from making one? The long process however my friends, that’s a thing from the past (read that in your best infomercial voice) because today is all about how to make a carrot cake in no time, with no fancy equipment and in a kitchen that has the size of a Manhattan’s closet (read, small) Thing just got serious
But before getting to the nitty gritty and the how-tos I’m going to gush about this recipe and tell you that’s the most delicious carrot cake you are going to eat in your entire life. And let’s get really honest here for a second, it has a lot of carrots and almonds that totally count as healthy eating right? actually shh, I just don’t want to hear the answer.
Anyhow, the great thing about this recipe is not how fast, easy, and no fuss it is. No my friends, this is all the good thing + MIND BLOWING DELICIOUS!! This is the perfect baking recipe for people who are just starting to bake but also for people who bake a lot and for just around everyone and their dogs. it doesn’t matter your baking level you are still going to look like a rockstar and will leave everyone asking for seconds, and thirds and JUST GIMME THE WHOLE CAKE *grabby hands*. That of course, if you decide to share it (which I highly encourage just for the happy eyes people have when eating it) because it’s SO SO GOOD (and did I sid good?= You’ll want to keep it a secret and store it in your freezer and feel the awesomeness of coming home to homemade carrot cake.

How to make a carrot cake
Tips to make the best carrot cake in no time
- Grate your carrots: Thinly slicing them won’t work. If you don’t have a grater (because honestly how many people have one of those this days?) Use your blender or your food processor. But trust me don’t slice it. It’s just not the same.
- Use brown sugar and white sugar: There are lot’s of baking reasons to do this, but most of them involve chemistry and I don’t want to bore you. Trust me if you could use one or the other I would do it (I just love to take things to the minimum) But in this cake, the brown sugar white sugar combo takes the carrot cake to the next level of carrot cakes
- You can also add pecan nuts (that just today I learned how to pronounce) but they are completely optional so if you are short on time, on ingredients or just plain broke (those little nuts are expensive!) you can totally take them out and still be able to enjoy the most delicious carrot cake on the planet.
- You can be LAZY CARROT CAKE BAKER!! Yeah, it required bold and caps because (aside from your blender) this only takes one bowl!! and yes, you can toally be lazy and cool and a master baker at the same time and also have still space in your sink after baking.

Decorating a carrot cake.
This is completely optional because you just made the most delicious carrot cake on the planet and honestly when you just made the most delicious thing on earth there’s no need to decorate it but if you are feeling extra fancy add frosting (frosting + carrot cake = ) and then you could add some almonds on top and then dance my friend because that carrot cake will be singing you a love song. A frosting and carrot cake love song full of creamy deliciousness. For this I used the ultimate vanilla frosting (go there if you want lots of tips on how to make frosting)
- 1 1/4 Cup flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 3/4 Cups butter
- 1/2 Cup brown sugar
- 1/4 Cup white sugar
- 2 Eggs
- 1 teaspoon vanilla extract
- 1 Cup grated carrots
- 1/4 Cup water
- Preheat the oven to 350 degrees. Grease and flour a cake pan.
- In a bowl mix the butter and sugars until fluffy.
- Add the grated carrots and the eggs.
- While continue mixing add the vanilla extract, baking powder and cinnamon,
- Pour the water.
- In two additions add the flour and continue mixing until everything is well incorporated.
- Pour the batter <g class=”gr_ gr_87 gr-alert gr_gramm undefined Grammar multiReplace” id=”87″ data-gr-id=”87″>in</g> the cake pan and take to the oven for 30 minutes or until done.
- Take out, let it cool and enjoy.
