How to make Gingerbread Cookies

I LOVE gingerbread cookies, but that is a fact that I discovered like 3 months ago, when I ate my first gingerbread cookie, weird I know because who on earth waits 22 years to eat a cookie?

But for some reason they were never appeling to me (specially when I could choose a lemon cookie or a hot chocolate cookie).

However, it was love at first bite and I took the challenge to replicate them at home.

After a couple of times, I can say I finally got a recipe that is not just as good but actually better than all the gingerbread cookies out there today.

This post is all about how to make Gingerbread cookies, the best gingerbread cookies ever, and they just take less minutes of active time something that in my opinion is pretty awesome!!

They are rolled in sugar before baking so they are lightly crunchy on the outside and they are airy (but not spongy) so they go perfect with a hot mug of chocolate (or if you live in a hotter place an Oreo milkshake maybe?)

They also have the perfect amount of spice so if you are not into super spiced cookies this is perfect for you!!

Think Holiday in a bite without feeling like you are taking a bite of a candle (what? am I the only one that feels like that when the sweet treat is way to cinnamon y, gingery and pumpkin spicy?)

They also look just like if you both them out of a bakery which makes them perfect for gifts, in case you are looking at them and thinking “how can I give them as a gift?”

I would say, place them inside a clear bag (they are too cute to hide) and add close them with some colorful ribbon and a tag, you just went full Martha Stewart on like 2 minutes

To make them you just need traditional ingredients that you probably already have in your pantry, flour, butter ad sugar.

You are going to need some spices I sued ginger, cinnamon and nutmeg, but if you do not have any of them feel free to leave some out, the flavor with slightly vary but the result will still be delicious!

Once you have your ingredients just mix them all on a bowl,  make small dough balls and roll them on sugar.

Place them in the refrigerator and then in the oven fro 15 minutes and voila you just made yourself the most delicious batch of gingerbread cookies.

How to make Gingerbread Cookies

Ingredients
  • 3/4 Cups butter
  • 1 Cup sugar
  • 1 Egg
  • 2 1/4 Cup flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • More sugar for rolling
Instructions
  1. Preheat the oven to 375 degrees. Line a cookie tray with some parchment paper.
  2. In a bowl mix butter and sugar, add the cinnamon, ginger, nutmeg and baking powder.
  3. Mix in the egg and slowly add the flour until your dough is thick
  4. For small balls and roll them on sugar.
  5. Place on your cookie tray and refrigerate for 15 minutes.
  6. Take to the oven and bake for another 15 minutes or until golden brown.
  7. Remove from oven and let them cool.
  8. Serve and enjoy
