Add 1 1⁄2 cups of apple cider vinegar, 1 cup erythritol, and 10 crushed garlic cloves to a medium saucepan. 

Heat over medium heat until sugar dissolves. 

Add 3 pounds of fresh red jalapeño peppers. 

Boil for 20 minutes, stirring occasionally. 

Remove from heat, let cool slightly, then puree in a blender or food processor until smooth. 

Return mixture to the pot, bring it back to boil, reduce heat, and simmer uncovered until reduced by one-third. 

Cool completely before storing in an airtight container or sealed jar in the refrigerator for up to six months.
