Every time that I’m close to lemon cookies I feel on a elegant, delicate and extra feminine tea party, I don’t know if it’s how they look like, how crunchy on the inside and ultra creamy on the inside they are of if I think that because the 5 year old Anita was extra happy having them in the elevated tea parties she hosted with Miss Plushy Bear and Lord Momo (my toys were very important people around here) but the thing is this cookies are extra adorable

and tasty

and lemony

also, they are filled with the most creamy frosting ever

that is lemony too

I will answer that myself, yes it’s perfect!!

I know I always say the same thing, this is super easy to make, you are not going to have lots of dishes to clean later, but I have to add one more thing, well maybe 2 more things, ok ok more like 3 things, but this is the most important:

Lemon cookies bake super fast!!!

Yes, like oh my god I can’t believe how fast

like 12 minutes fast

like thanks god they bake so fast because they smell like a mixture of country house with lemon fields (I don’t have and idea how lemon fields smell, but I’m pretty sure it’s close to this) with the victory of baking at home, lemon cookies


Yes, you are gonna be drooling right next to the oven the whole time.

At least, I was.

Then, I tried to catch a lemon cookie from the pan when it was supposed to be cooling and I discovered why you are supposed to let them cool before eating (hint: you don’t burn yourself, and also because they harden a bit on those minutes so they don’t break when you grab them).

And then comes the frosting. That is the best of the lemon cookie world, and it’s what adds that extra lemony kick to the cookie.

Because you can make it as lemony as your heart desires, so if you think that more lemon equals more happiness just add some more drops of lemon juice (plus a few teaspoons of confectioners sugar).

Or, if you prefer a more subtle flavor, just add a bit less.

I like to think that they are like portable happiness in a cookie sandwich. They transform every snack, dessert, secret hunting to the fridge at midnight to grab something to eat (you, this cookies, the light from the fridge, think about it is almost romantic) into an elegant experience.

And if you are feeling extra lazy, you can leave the frosting out, they are great by themselves to, lemon cookies don’t want to complicate things, they just want to be delicious

Quick easy and fast recipe for lemon cookies with lemon buttercream frosting! The perfect cookie sandwich to elevate every moment
Ingredients
  • 1 Cup flour
  • 1/4 teaspoon baking powder
  • 1/2 Cup sugar
  • 1/4 Cup + 1/8 Cup butter
  • 1 tablespoon egg white
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 4 tablespoon sprinkles
  • grated lemon zest (about 1 tablespoons)
  • Vanilla frosting
  • 2 tablespoon lemon juice
Instructions
  1. Preheat the oven to 350 degrees and line a baking tray with parchment paper
  2. In a bowl mix the butter and the sugar until creamy. Add the vanilla and the egg white and mix for 30 seconds more.
  3. In 3 additions and the flour and the baking powder (at this point you can start mixing with your spatula)
  4. Add the lemon juice and continue until you have a thick dough
  5. Roll into balls and press down with the palm of your hand to make them flat. Place them on the parchment paper and take to the oven for 12 minutes or until the borders are golden
  6. Take them out of the oven and let them cool
  7. Meanwhile mix the vanilla frosting with the lemon juice, add more confectioners sugar if needed.
  8. Add buttercream to one cookie and top with another one. Repeat the process with the rest.
  9. Serve and enjoy

Lemon cookies, realmente cada vez que veo galletitas de limón me siento en una fiesta de té super elegante, femenina y delicada.

No se si es el amarillito sutil, si es que sean crocantes por fuera y super suavecitas por dentro o si es que la Anita de 5 años era feliz teniéndolas en sus tardes de te con Miss Osita y Lord Momo (Mis muñecos eran personajes muy respetados en los alrededores), pero la cosa es que son galletas muy adorables

y saben muy ricas

y son de limón

y tienen frosting por dentro super cremoso

que sabe a limón también

no es perfecto?

Me responderé yo misma, si si es perfecto!

La verdad es que siempre les digo lo mismo, hacerlo es muy fácil y ensucia pocos platos pero esta vez tengo que incluir una cosa extra bueno 2, o a lo mejor tres pero en fin esta es la mas importante de todas

Se hornean super rápido!! (las lemon cookies obvio)

Síí, así super rápido de 12 minutos en el horno … y para afuera, tostaditas y crocantes.

Y menos mal que se hornean rápido, porque el olor mientras se hornean es de otro planeta!

Una mezcla de casita de la pradera con plantación de limones (nunca he olido a una pero seguramente es así) con el olor de la victoria de estar horneando lemon cookies en casa.

Obviamente uno se queda pegado esos 12 minutos al horno contando cada minuto y rogando que sea menos, y luego obviamente uno se quema un poquito un dedo tratando de pescar una lemon cookie recien salida del horno (mala idea, quema, se deforma, hay que dejarla enfriar al menos 2 minutos)

Y luego esta el frosting, que es lo mejor del mundo también y le termina de dar ese toque de limón.

Además, puedes hacer que el frosting sea tan lemonoso como tu corazón quiera.

O sea, que si eres de los que opina que donde hay más limón hay más felicidad, agrégale unas gotitas mas y otro poquito de azúcar pulverizada.

Si por el contrario, opinas que cuando se trata de limón, un sabor sutil es mejor, reduce un poco la cantidad de jugo y listo.

Y entonces cuando sumamos frosting mundialemente bueno + galletas perfectas tenemos las mejores lemon cookies del mundo!

Son como sandwichitos portátiles de felicidad y transforman cualquier merienda, postre, cacería furtiva a las 12 de la noche por chucherías (tú, estas galletas, la luz de la nevera, piénsalo, es casi romántico) en una experiencia elegante.

También puedes hacer solo la galleta, dejar el frosting de lado y decir que ya hiciste suficiente por un día, son buenisimas solas también, las lemon cookies no son exigentes, son deliciosas y ya.

Lemon Cookies

Para 8 lemon cookies (sandwiches):

1 Taza de harina
1/4 Cdta polvos de hornear (en muy muy poquito)
1/2 Taza de azúcar
1/4 + 1/8 Taza de mantequilla
1 Cda de clara de huevo
1 Cda de jugo de limón
1 Cdta de vainilla
1 Cda de rayadura de limon

Frosting de vainilla
2Cdas de jugo de limón

Precalienta el horno a 350 grados y sobre una bandeja de hornear coloca papel encerado.
En un bowl mezcla la mantequilla y el azúcar hasta que este cremoso. Añade la vainilla y la clara de huevo y bate por 30 segundos mas.
En 3 adiciones vierte la harina y los polvos de hornear, (en este punto puedes dejar tu batidora y usar una espátula). Añádele la cucharada de limón y la rayadura y continua amasando hasta que tengas una mezcla compacta.
Con tus manos forma bolitas dpequeñas y aplánalas. Colocalas sobre el papel encerado
Llévalas al horno y hornea por 15 minutos o hasta que estén doradas por los bordes
Retíralas del horno y antes de sacarlas de la bandeja o moverlas déjalas enfriar.
Mientras prepara el frosting, mezcla el buttercream de vainilla con 1 cucharada de jugo de limón. Si hace falta agrega mas azúcar pulverizada.
Coloca frosting de limón en una de las galletas y cubre con la otra.
Sirve y disfruta
