I’m so excited about carrots that I had to make another carrot cake, yes baby good things come in pairs, or more like 3 if you also count those carrot cake cupcakes that everyone raved about. But in this case is a farm to table organic carrot cake using only natural organic ingredients. This is the elevated yet down to earth version of a traditional carrot cake and it’s incredibly delicious and so fluffy you’ll want to make it every day, easter or not.
Actually, think of this as the organic carrot cake you want all your friends, parents, boyfriend/girlfriend/SO to meet.
It has a burst of flavor, just the perfect amount of spiciness and it’s so fluffy and packed with carrots that, can you give me another slice?
This past Sunday I went to the Farmers market in the pursuit of the prettiest carrots. Truth is when a recipe is so simple and easy, you really want good quality ingredients. Ingredients make all the difference in your desserts, they are the ones that can make or break it (think: if you buy chocolate that tastes less than stellar your bronies are going to taste less than stellar) and they are definitely the ones that make your treats shine in all it’s bright glory.
SO when I want something to be really bright and fresh and packed with flavors I go the organic way, hence my visit to the farmers market (in case you are wondering that’s the farm part of the farm to table).
Since this is the best possible carrot cake in the planet I had to go with the best organic all purpose flour I could find. Enter Bob’s Reb Mill Organic Unbleached All Purpose White Flour It’s a super versatile kitchen staple that you can use to bake any single thing. What I’m trying to say if that if you have a small kitchen ( I feel you my friend!) then you can only have a pack of this flour and call it a day because the baking world is yours.

For the frosting, I used The Ultimate Vanilla Frosting
- 1¼ Cup Bob’s Red Mill Organic Unbleached All Purpose flour
- 2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon Nutmeg
- ¾ Cups butter
- ½ Cup organic brown sugar
- ¼ Cup organic white sugar
- 2 Eggs
- 1 teaspoon vanilla extract
- 1 Cup organic grated carrots
- ¼ Cup water
- Preheat the oven to 350 degrees. Grease and flour a cake pan.
- In a bowl mix the butter and sugars until fluffy.
- Add the grated carrots and the eggs.
- While continue mixing add the vanilla extract, baking powder and cinnamon,
- Pour the water.
- In two additions add the Bob’s Red Mill Organic Unbleached All Purpose flour and continue mixing until everything is well incorporated.
- Pour the batter into the cake pan and take to the oven for 30 minutes or until done.
- Take out, let it cool and enjoy.
