Pumpkin Bars are the highlight of Fall (hint they can be a perfect grown up treat for Halloween too!) They are soft, and warm and cozy and pumpkinpy (is pumpkinpy eve a word?) and best of all they are really easy to make. This is the kind of treat that you want to eat curled up in a blanket.
Seriously, I mean fall is made to eat fall foods, there is no other way around. During fall it’s mandatory to eat all the pumpkin spice latte cupcakes, all the one bowl Halloween cupcakes and all the pumpkin bars, and you just have to do this wearing a sweater (yes a sweater eve if you are in Florida) and thinking about crisp leaves and boots. I don’t know what you think but I’m a crazy fall lady, people tend to be like that with cats, I’m like that with fall.
Pumpkin Bars are also an excellent treat to make when you are in the middle of a horrible flu and just want to curl up in a hole and die eat, at least that’s how I got to the recipe. I was feeling really really bad (the reason why I went a whole week without posting) and I craved sweets, and wanted them really fast, like “oh my god I need to eat something sweet now or I’m going to start crying for no reason at all” (I can get moody when I’m not feeling well) so I played for a bit in the kitchen and this little treat came to mind and want to know something?
It’s mind blowing
Seriously, it’s out of this world good + you only need 1 bowl and a spoon (#goals) also they bake in something like 20 minutes and you can it just like it is or topped with a bit of vanilla frosting, or if you are a desperate for desserts type of person like, ahem I, you can have it straight out of the oven (I would add all the heart emojis in here because fresh out of the oven pumpkin bars are the best ever!!!)
How to make Pumpkin Bars
They are seriously easy, like 1 told you one bowl easy, and the ingredients are things that you probably already have sitting in your kitchen. You mix everything together, pour your mixture in a cake pan and bake for around 20 minutes and that is it. (sorry I might be dancing a bit)

- 2 Eggs
- 1/4 Cup canned pumpkin puree
- 1/2 Cup melted butter
- 1 Cup sugar
- 1 Cup flour
- 1 teaspoon baking powder
- 1 teaspoon pumpkin spice
- 1 teaspoon cinnamon
- Preheat theoven to 350 degrees. Grease and flour a cake pan
- In a bowl mix the eggs, melted butter, sugar, and pumpkin puree. Add the cinnamon and the pumpkin spices. Mix in the flour and the baking powder and continue mixing until everything is well incorporated.
- Pour the batter in the cake pan and bake for 20 minutes or until done.
- Take out of the oven and let it cool
- Top with vanilla frosting
