SINGLE SERVING PEANUT BUTTER COOKIE!! Like in singular because it’s just one HUGE single serving peanut butter cookie that tastes like happy dreams! Guys seriously this is it, you don’t need any other cookie recipe in your life (except maybe this sugar cookie tutorial) you just need to bake this and then eat it all by yourself, or you know you could be a good person and share it because it’s huge and delicious and you woke up feeling all generous.
Look, I love to bake things in batches like 1 dozen peanut butter cupcakes, or a peanut butter and chocolate cake (see the trend there?) but my family is tiny, like teeni tiny, like my husband and I tiny so while big batches are delicious (and you can freeze them) they are not the best fit for us sometimes, like on Mondays when you just told yourself that you will commit to only eating dessert once a day.
Besides that I like variety in my life,
I like to eat a single serving peanut butter cookie today and a cupcake tomorrow, and a brownie the next day
That’s why small batches and single serving things are pretty awesome. You still have the dessert you are craving without the pressure of commitment. Don’t look at me like that, the pressure is real you guys, imagine yourself with a full batch of 12 cupcakes only to discover 20 minutes later (and after you only ate 3) that now you are craving a completely different dessert? You get all the dessert FOMO at once.
Not with single serving treats, they understand, they are there to help you when you need them, and then voila you have space for another one in your life. I think we can call them a one night stand sweet edition.
Are desserts getting to similar to relationships?
Maybe but who cares? No need to navigate anything of that when you have a single serving peanut butter cookie that has the size of your head and that you can eat all by yourself with a huge glass of milk while wearing your comfiest set of pajamas. (Valentine’s Day plan anyone?)
Also making them is easy my friends, like everything we do around here, because honestly who has time for slaving in the kitchen these days? Not me, I prefer to be on the eating side of things.

So let’s jump directly into the recipe for the chewiest, softest, most indulgent cookie you are going to eat ever. period.
- 1/2 Cup flour
- 3 tablespoon butter
- 3 tablespoon peanut butter
- 3 tablespoon brown sugar
- 3 tablespoon white sugar + more for rolling
- 1 tablespoon egg
- Drops of vanilla
- Preheat the oven to 350 degrees. Line a cookie pan with parchment paper.
- In a bowl mix the butter, peanut butter and both sugars.
- Incorporate the egg and the vanilla
- Add the flour and mix until everything is well incorporated.
- Form a ball with the dough and roll it in sugar.
- Place on the cookie pan and slightly flatten it.
- Bake for 12 minutes or until done.
- Remove from the oven and let it cool for a couple fo minutes.
