Single Serving Peanut Butter Jelly Cupcake

Single Serving Peanut Butter Jelly Cupcake overflowing with peanut butter!! Also they are vegan, can be made in the microwave and are the most delicious thing EVER!!!

I’m throwing it back here guys, I’m throwing it back really hard with this Single Serving Peanut Butter Jelly Cupcake.

It all started while I was on Spnapchat (carmelapop) and there was a back to school compilation of videos, then I remembered about all the pb and jelly sandwiches that I ate during that time and then I got a kick of nostalgia that created a huge craving.

I had to do Peanut Butter Jelly something.

But I was in lazy mood, which basically means that I didn’t’ wanted to bake.

Also, I didn’t had any bread on hand so no sammich for me.

It could only mean one thing, I had to do some single serving sort of thing, and since I love cupcakes, and I love peanut butter cupcakes I thought why not.

Well, I succeed, I created

THE BEST EVER SINGLE SERVING CUPCAKE IN THE WORLD

On capitals so I can really express how it really is the best cupcake in the world, you literally wouldn’t notice the difference compared to a whole batch

Why did you make only one Ana? (I don’t care if you are not asking that, I’m going to act like if you just did)

Well not only because I’m lazy (like I told you before) but more because some things are meant to be enjoyed alone

while singing “All the single servings all the single servings” in your best Beyonce voice, while moving your cupcake in the air like if it was a ring in your hand (yes, that’s my version of the single ladies song)

After I baked the cupcake I started brainstorming ways to stuff the most deliciousness into it,

so I stuffed it with a huge tablespoon of Peanut butter.

Because peanut butter

But that was not enough for my Single Serving Peanut Butter Jelly Cupcake, I wanted more, I’m intense like that

And then it came to my mind the crazy idea of making jelly frosting,

so I mixed the ultimate vanilla frosting with a bit of jelly because “If you liked then you should have put jelly on it”  (that was beyonce again) and because I wanted to really bring in all the 90s power I added some drops of purple food coloring, so the cupcake would look similar to the Lisa Frank school supplies that were like the best thing back in school. It was like, if you had one of those binders, folders, notebooks or whatever you were the queen of the colorful, over the top, kind of psychedelic world. I loved it.

And that was it, that was how this Single Serving Peanut Butter Jelly Cupcake came to life and I love every bit of it

Also, it’s not only that they look straight out of the 90s, or that they are single serving, or that they are literally overflowing with peanut butter or that the jelly frosting is the best thing in the world since peanut butter and jelly. Oh no, that is not enough.

What makes the Single Serving Peanut Butter Jelly Cupcake truly spectacular is that

  1. They are vegan!!!!! Only make sure to make the frosting with vegan butter
  2. You can make them in the microwave, so if you don’t have an oven on hand, are too lazy (or melting) to turn on yours, or just arrived to your dorm room and want to become the IT person of the campus this cupcake has your back

I mean go now, go now and make them, they are literally going to take you 5 minutes or so,  and indulge while throwing it back, It’s Thursday so it’s social media aproved too

Single Serving Peanut Butter Jelly Cupcake
Recipe Type: Dessert

Ingredients
  • 1/4 Cup + 2 tablespoon Flour
  • 2 tablespoon sugar
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon baking powder
  • 2 tablespoon oil
  • 1/4 Cup water
  • 1 tablespoon peanut butter
  • Vanilla frosting
  • 1 tablespoon jelly
  • 2 drops purple food coloring
  • 3 tablespoon confectioners sugar
Instructions
  1. If you are making it in the oven preheat it to 375 degrees, place a cupcake liners inside a ramekin
  2. If you are making them in the microwave place a cupcake liner inside a mug
  3. Mix the flour, sugar and baking powder together.
  4. Make a well in the center and pour in the water, vanilla and oil. Mix well until everything is incorporated.
  5. Pour the batter on the prepared ramekin/mugand take to the oven (for 15/20 minutes) or to the microwave (1:30 minutes)
  6. Remove and let it cool.
  7. Meawhile prepare de frosting mixing the vanilla frosting with the jelly, confectioners sugar and food coloring, place in a pipping bag.
  8. When the cupcake is cool cut a circle in the middle and stuff with the peanut butter. Top with the jelly frosting.
  9. Serve and enjoy

Hoy estoy haciendo un ThrowBack Thursday super fuerte con estos Single Serving Peanut Butter Jelly Cupcake

Todo empezó cuando estaba en Snapchat (carmelapop) y había una serie de vídeos de regreso a clases, viéndolos fue que me acorde de todos los sándwiches (bocadillos/tortas) de mantequilla de maní/cacahuete y mermelada que comí durante ese tiempo y me dio un poquitito de nostalgia que solo podía significar una cosa

Tenia que hacer algo con mantequilla de maní y mermelada, lo que fuese

Pero estaba en modo perezoso, que básicamente significa que no quería hornear

ademas tampoco tenía pan a la mano así que un sándwich no podía ser

Lo que me llevó a que tenía que ver como hacer algo que solo diese una ración, y como me encantan los cupcakes, y me encantan los cupcakes de mantequilla de maní hacer unos que ademas tuviesen mermelada no parecía mala idea

Bueno pues les cuento que fue un exitazo!!!

Son los mejores cupcakes de una sola ración del planeta tierra y mas allá

Es que de verdad que es imposible notar la diferencia de unos hechos con una receta clásica (de mil raciones)!

¿Por qué hiciste solo uno Ana? (No me importa que no me lo estés preguntando, yo voy a actuar como si lo hubieses hecho)

Bueno, no solo porque soy perezosa, sino mas bien porque hay cosas que están hechas para disfrutarse solos

Mientras cantamos “all the single servings all the single servigs” en nuestra mejor voz de Beyonce y movemos un cupcake el aire como si fuera un anillo (sí, esa es mi versión de la canción single ladies)

Después de hornear el Single Serving Peanut Butter Jelly Cupcake empecé a pensar maneras de meterle mas cositas deliciosas,

así que lo rellene con una cucharada gigante de mantequilla de maní

porque aja hacía falta

Pero eso no era suficiente para este Single Serving Peanut Butter Jelly Cupcake, yo quería más, me gusta vivir la vida al límite

Y ahí fue cuando se me ocurrió la idea loca de hacer un frosting de mermelada

Así que mezclé el ultimate vanilla frosting con un poquito de mermelada y porque quería realmente meterle todo el poder de los 90 que pudiese le puse unas gotitas de colorante morado para que se viese más similar a los cuadernos de Lisa Frank, que era como el no va más de la moda cuando yo estaba en el colegio. Me encanta(ba)

Y así fue, así es como el Single Serving Peanut Butter Jelly Cupcake vino al mundo

Además lo que lo hace tan genial no es solo el hecho de que sea salido de los 90s, que sea de una sola ración (lo que significa 1 solo cupcake señores!!), o que esté literalmente desbordándose de mantequilla de maní, o que el frosting de mermelada sea la mejor invención después de la mantequilla de maní y mermelada. Oh no no, eso no es suficiente

Lo que hace al Single Serving Peanut Butter Jelly Cupcake verdaderamente espectacular es que

  1. Es vegano!!!
  2. Los puedes hacer en el microondas, asi que si no tienes horno, te da pereza prenderlo o te estas derritiendo y pensar en prenderlo es una locura, este cupcake te tiene la vida resuelta

Así que ve, ahora, ya, corre, y hazlos, te van a tomar literalmente 5 minutos y demás es jueves!! así que los puedes subir con el hashtag #TBT

Single Serving Peanut Butter Jelly Cupcake
Para 1 Single Serving Peanut Butter Jelly Cupcake

1/4 Taza + 2 Cdas de harina
2 Cdas de azúcar
1/4 Cdta de vainilla
1/4 Cdta polvos de hornear
2 Cdas mantequilla
1/4 Taza de agua

1 Cda mantequilla de maní

Frosting de Vainilla
1 Cda mermelada
2 gotas de colorante
3 Cdas de azúcar pulverizada

Si los estas haciendo en el horno precalientalo a 375 gradosF, coloca un capacillo/capsula en un ramekin
SI los estas haciendo en el microondas coloca un capacillo/capsula en una taza
Mezcla la harina, azúcar y polvos de hornear
Haz un huevo en el centro y vierte el agua, la vainilla y el aceite, mezcla bien hasta que todo este incorporado
Vierte la mezcla en el ramekin o en la taza y lleva al horno (por 15/20 minutos) o al microondas (por 1 minuto y medio)
Retíralo y déjalo enfriar
Mientras tanto prepara el frosting mezclando el frosting de vainilla con la mermelada, azcar pulverizada y colorante morado. Colócalo en una manga pastelera
Cuando el cupcake este frió corta un circulo en la parte superior y rellenalo con mantequilla de mani. Tápalo con frosting de mermelada
Sirve y disfruta
