Ingredient list:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 can (28 ounces) diced tomatoes
  • 2 tablespoons tomato puree
  • 1 teaspoon sugar
  • 1 tablespoon Italian seasoning
  • 4 cups vegetable or chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup heavy cream
  • Fresh basil leaves to serve

Optional toppings: shredded cheese, croutons, chopped fresh parsley

Instructions:

  1. Firstly, heat the olive oil to medium heat in a large pot or a Dutch oven.
  2. Once the oil is hot, add the onion and garlic.
  3. Secondly, add the diced tomatoes, chicken or vegetable broth, tomato paste, sugar, Italian seasoning, salt, and black pepper. Stir well to combine.
  4. Bring the soup to a simmer and cook for about 15 minutes until the flavors have melded together.
  5. Use an immersion blender or a food processor to process the soup until smooth.
  6. Add the heavy cream and simmer for an additional 5 minutes.
  7. Finally, serve the soup with basil leaves and your desired toppings. Enjoy!
