I love cheesecakes. Or, I seriously do love eating them. The fact they take a lot of planning to make? Not so much.
When I crave something, I crave it now. Also, I like to be able to surprise everyone with a delicious dip that I can make in 10 minutes while my friends are arriving (yes, this is also for all the procrastinators on the world) so this Strawberry Cheesecake Dip is just creamy perfection.
It tastes like traditional cheesecake sans the baking/cooling/waiting time. Can I hear a woohoo??
I made it with a brick of Philadelphia Cream Cheese because, what else could you use to make cheesecake anything?
Seriously, this Strawberry Cheesecake Dip is a recipe where the cream cheese is the hero, so you obviously need to pick a cream cheese that tastes wonderful.
And, between you and I (and, well, all the other readers of this blog) nothing tastes like Philadelphia Cream Cheese + it’s made with fresh milk and real cream, and with no preservatives, which is pretty awesome.
You also need some powdered sugar, a few drops of lemon, a little bit of vanilla and that’s it. You can serve it simple, topped with sliced berries, mixed with crushed berries (like I did) or with every other thing you have on hand.
This is a recipe to take inspiration from, get in the kitchen and bring your foodie ideas to life! It’s your moment, my cheesecake friend, to let your imagination run wild!
So, if you are feeling chocolaty, just mix in some chocolate chips; if you want to cater to your peanut-butter-loving friends, swirl in some tablespoons of peanut butter and call it a peanut butter cheesecake dip; or if you are feeling like this is it, like you want to make the next big cheesecake thing, serve it with a pick-your-own-topping bar and get the prize for best gathering organizer in the world.
Oh and did we talk about the fact that this is like the easiest recipe in the whole world? I mean, you don’t even need to turn on the oven to make it.
Hey, you don’t even need to own at oven at all (hello, small kitchen approved!). You just need 5 ingredients, a bowl, fresh delicious ingredients (Philadelphia Cream Cheese, I love you) and you are all set.
Seriously dude, how can I make this Strawberry Cheesecake Dip?
Place a brick of Philadelphia Cream Cheese in a bowl. Add powdered sugar, vanilla and lemon (exact measurements below). Mix it, my friend. Seriously, mix it as though there was no tomorrow (aka 3 minutes).
Now, you can serve it like that if you want, or if you don’t have berries on hand, because Philadelphia Cream Cheese is so good, you don’t need a lot of things to make a delicious treat! But, if you want to add a bit of spring/summer flair to your dip, or if you are feeling fresh and fancy, then add some diced berries and mix some more (around 2 more minutes).
That’s it. See? I told you this was no-fuss easy. Serve it with some crunchy cookies, crackers, and some pieces of fresh fruit, and eat it surrounded by the coolest people in your life, (laughing at bad jokes while eating this is completely optional).
Super Easy Strawberry Cheesecake Dip
Time: 10 minutes
Yields: 8 servings
Ingredients:
- 1 brick Philadelphia Cream Cheese Spread, softened
- 1/2 cup powdered sugar
- 1 tablespoon lemon juice
- 1 1/2 teaspoons vanilla extract
- 1/2 cup sliced strawberries
- 1/4 cup cubed strawberries to decorate
Directions:
- In a bowl, combine the Philadelphia Cream Cheese, the lemon juice, and the vanilla extract. Mix for 1 minute.
- Add the powdered sugar and the sliced strawberries and mix until everything is well incorporated (around 3 minutes).
- Top with the cubed strawberries.
- Serve it with some cookies and fresh fruits. Share and enjoy!
