If you’ve never heard about sweet cream pancakes before well, you are in for a treat. These are slightly sweet in a way you don’t really need to add syrup (we still do because syrup is life but you don’t really need to).
They are a staple on the Black Bear Diner breakfast menu, a restaurant chain from California and an original recipe developed by them.
I was craving them big time so I decided to try my hand at recreating it. And after a lot of testing and trials the end result is AMAZING.
To explain it further, the McDonald’s Pancakes recipe I have results in extremely fluffy pancakes, these sweet cream pancakes on the other hand have a more melt in your mouth texture.

🥣 What ingredients you need
These are fluffy pancakes. As is the fluffiest pancakes ever and part of that reason is thanks to the great ingredient combination.
The other thing that’s fun or different about them is that this is a pancake recipe with heavy cream instead of milk.
Flour: Let’s start with the dry ingredients. Flour is obviously the main ingredient. I highly advise you use all purpose flour and not self rising.
Baking powder: We can thank baking powder for the amazing rise these pancakes get. Make sure you are using fresh baking powder so it’s as active as possible.
Sugar: These pancakes are perfectly sweet, which is why they have a touch more sugar than your traditional pancake recipe (2/3 cup sugar instead of 2 tbsps).
Eggs: Now we jump to the wet ingredients. Eggs are a total must in this recipe. They are also responsible for part of the fluff factor. I incorporate them whole into the recipe but if you want them extra tall you can also separate the eggs, whip up the egg whites until soft peaks form and then fold them into the batter.
Heavy cream: The reason why these pancakes are called sweet cream pancakes after all. Heavy cream has a higher fat content than milk which in turn creates these melt in your mouth pancakes.
Vanilla extract: To give it that little bit of extra sweetness.
🙌 How to make perfect pancakes
Now that we have all the ingredients on had is time to start cooking.
Add all the ingredients to a large bowl and whisk them together until incorporated.
Then in a separate bowl beat the wet ingredients until foamy.
Pour the dry ingredients into the wet ones and with the help of a spatula mix until just barely incorporated. You don’t want to overmix the batter. Mixing them just right is what creates the amazing melt in your mouth texture.
Heat a griddle on medium heat and spread some melted butter on top. Once it’s hot pour around 1/2 cup batter and cook pancakes until little bubbles form on top.
Flip the pancake and cook for 1 more minute or until done. The surface should be golden brown.

What I love the most about this recipe is that’s a great “basic” recipe. And when I say basic I mean it’s the perfect recipe to build on top and customize as you like.
You can add some lemon zest to the batter and create some lemon pancakes.
Or you can mix in some chocolate chips, the end result is incredibly indulgent and perfect for chocoholics.
And if you prefer fruit mix ins, you can also add some blueberries or strawberries to the batter.
Whatever you make this is a delicious recipe that works with pretty much anything you wish to add.
🌿 Is there a way to make them gluten-free?
You can swap the all purpose flour for a gluten free flour mixture. One of those cup for cup flour mixes is a great alternative!
Is there a way to make sweet cream pancakes healthier?
If you are looking to reduce the fat content a bit and boost up the protein you can switch the heavy cream for some Greek yogurt. While the end result won’t be exactly the same the result is really similar and just as good.
🤔 What’s the main difference between sweet cream pancakes vs buttermilk pancakes?
The main difference between both is the flavor. Buttermilk pancakes ave a slight tangy flavor to them. Sweet cream pancakes don’t.
On the other hand, buttermilk reacts with baking powder to produce a lighter and fluffier pancake. While that’s a must for some recipes that don’t have a lot of baking powder added into the batter this one accounts for it so there’s no need to add anything acidic.
❄️ How to freeze it
What I love the most about pancakes, in general, is the fact that they are freezer friendly. You can make a large batch and then place them on a baking sheet. You want to make sure they are on a single layer. Wait until they are at room temperature and transfer the whole baking pan to the freezer for 30 minutes.
Then you can just transfer them to a ziptop bag or an airtight container.
You can keep them in the freezer for up to 3 months.

Sweet Cream Pancakes
Ingredients
- 2 Cups flour
- 2 Eggs
- 3 Teaspoons baking powder
- 2/3 Cup sugar
- 3 1/2 Cups heavy cream
- 1 Teaspoon vanilla extract
Instructions
- In a bowl whisk together the flour, sugar and baking powder. Set aside.
- In a separate bowl beat the eggs, heavy cream and vanilla.
- Pour the wet ingredients over the dry ingredients mixing until just incorporated.
- Heat a skillet over medium heat. Spread some melted butter or vegetable oil on top.
- Pour 1/3 batter onto the hot skillet and cook for 2 minutes or until small bubbles appear on top. Flip and cook for 1 more minute or until golden brown. Repeat the process with the rest of the batter.
