This post was very difficult for me to write because I wanted to keep this recipe all to myself and not share it, and maybe package it somehow and sell it and then conquer the world with deliciousness, because it’s so good I’m pretty sure I would make big bucks with it. They are healthy cupcakes, because I firmly believe that we ALL deserve cupcakes not matter what, but they are not only healthy, healthy it’s to mainstream now, they are vegan, gluten free, can be made paleo and are (kind of) refined sugar free, oh and they are packed with a truckload of protein because why not?
Yes, vegan gluten free cupcakes to the rescue

The frosting? you are asking me (I don’t care if you are not in fact asking me let’s talk like if this was a real conversation and not just me ranting on the internet)
well ladies and gentleman, the frosting of the vegan gluten free cupcakes is pretty much clouds of creamy heaven
and vegan, and so high in protein it should be illegal
yes you read that right this creamy goodness over there is a

Oh My Gosh I Can’t Even
and it’s so good, so so good you are going to can’t even too
you are going to want to eat it with spoonfuls (not shame) and then lick it out of the bowl (a bit of shame if someone is watching but who cares?)
Ok I know I’m talking a lot and not getting you to the secret for awesomeness (aka the recipe for vegan gluten free cupcakes)
prepare, seriously prepare yourself because there is no possible way you are going to believe this
The frosting is made entirely with avocados and protein bars
AVOCADOS AND PROTEIN BARS!!!!
it’s so crazy I can’t believe how extremely good the results are
I used avocados and my favorite on the go snack Perfectly Simple Bars (you have to try them like for yesterday, because they are to die for!)
and a bit of cacao powder because I love chocolate, a couple of tablespoons of homemade hazelnut chocolate spread and to sweeten it up a tablespoon of maple syrup
and that’s pretty much it
Want the same taste without having to wait (seriously this only takes like 2 minutes so no wait at all but I can understand) just grab a bar and go they make me feel like if I’m eating this frosting on the go and me + frosting (of any kind) = happiness
ok now things to keep in mind, I made this recipe using this bars, they are what makes the frosting shine. I have not tried it with any other kind/brand/style/I think it can be bar, just so you know
You need to use ripe avocados, seriously the this.is.so.ripe.it’s.almost.rotten kind of ripe anything different will be a huge fail. Well huge fail it’s a bit to much but it would not turn out that good
and that’s it.
For the cupcake I used a gluten free baking mix (you can substitute it for a Paleo one) and used coconut sugar instead of traditional sugar
Now lets get baking
I’m going to add the frosting recipe here and the cupcake recipe in a recipe card
Vegan Gluten free Frosting
1 Avocado
2 Perfectly Simple Bars
1 tablespoon maple Syrup
1/8 Cup cocoa powder
4 tablespoon chocolate hazelnut spread
In a food processor add the Perfectly Simple bars and process for 1 minute.
Add the rest of the ingredients and keep processing until you have a creamy frosting
Refrigerate for 30 minutes so it sets up
Decorate your cupcakes and sprinkle them with some chopped Perfectly Simple Bars
- 1 1(2 Cup flour
- 1 1/2 teaspoon baking powder
- 1/2 Cup vegan butter
- 1 Cup almond milk (or other non dairy milk)
- 1 teaspoon vanilla
- 1 Cup coconut sugar
- Preheat the oven to 350 degrees. Line a cupcake pan with 12 cupcakes liners
- In a bowl mix all the ingredients until they are well incorporated
- Divide the batter between the 12 cupcake liners and take to the oven
- Bake for 15/20 minutes or until done
- Let them cool and decorate with the vegan frosting
