Asparagus Soup
A delicious asparagus soup very easy to cook. And you will love it!

- 1 tablespoon olive oil
- 1 unit onion
- 2 cloves garlic
- 1 lb asparagus - trimmed and chopped
- 4 cups chicken or vegetable stock
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup milk
In a large pot, heat the olive oil over medium heat
Add the onion and garlic and cook until softened
Add the asparagus and chicken stock and bring to a boil
Reduce heat and simmer for 10 minutes
Carefully transfer the soup to a blender and blend until smooth
Return the soup to the pot and stir in the milk
Season with salt and pepper to taste
Serve hot and enjoy!
