2Cupsflour
2Eggs
1Tablespoonbaking powder
1/3Cupgranulated sugar
1/3Teaspoonsalt
1 1/2Cupbuttermilk
1/3Cupbuttermelted
1Teaspoonvanilla extract
Instructions
In a bowl whisk together the flour, baking powder, granulated sugar, and salt. Set aside.
In a separate bowl whisk the buttermilk, melted butter and eggs until combined.
Pour the wet ingredients over the dry ingredients and with the help of spatula stir until just barely incorporated. Let the batter rest for 30 minutes if you have the time.
Heat a skillet over medium heat. Once it's hot bring the heat down to low. Spread with butter or a bit of oil.
Pour around 1/2 cup batter on the hot skillet and cook for 1 to 2 minutes or until small bubbles form on top. Flip the pancake and cook for 1 more minute or until golden. Repeat the process with the rest of the batter.
